The successful candidate will be friendly, personable and passionate about all things food and drink. This is a fantastic opportunity for an experienced Chef de Partie looking for a new role in an award winning, critically acclaimed group. The Restaurant In partnership with Chef Luke Farrell, Speedboat Bar takes inspiration from the Thai-Chinese restaurants in Bangkok’s Chinatown and the thrilling sport of Speedboat racing along the canals (klongs) of Thailand. The menu explores the ingredients, flavours and techniques that took Luke to Bangkok and its unique foodways; Chinese in origin but now uniquely Thai. A masterclass in wok cooking, roasted meats and spicy sauces, each hinging on the specialist Thai herbs and ingredients cultivated and grown at Luke’s nursery, Ryewater, in Dorset. The bar focuses on sharing Singha beer towers, slushies and chasers; the signature Speedboat cocktails – Snakesblood Negroni; Shop Window Old Fashioned; and Jelly Bia made with frozen Leo Lager; as well as softs such as a Snakefruit soda. The Position We're looking for an experienced Chef de Partie to join our kitchen team, creating exceptional dishes and delivering an all-encapsulating experience to our guests. Manage portion control and wastage to achieve margin targets as set by management. Be able to work in a small space, in front of the guests. Manage kitchen processes so that food is delivered to the table in a timely manner as required by the front of house. Work closely with Managers to ensure smooth cooperation between the departments. Maintain high standards of cleanliness and food standards in the kitchen in order to achieve 5/5 food standards ratings. Ensure all required compliance forms are filled out correctly and in a timely manner. Manage kitchen processes to minimise wastage Complete stocktakes as required. Manage stock levels to avoid over-ordering. Maintain kitchen equipment to a high standard, carrying out regular cleaning as required. PERSON SPECIFICATION Experience Minimum one year of experience in charge of a section Minimum one year with an open kitchen and be able to have direct contact with guests – useful but not essential Skills & interests Proven skills in food presentation and flavor pairings Fluent in English; spoken Italian is useful but not essential.
