Your role in this is vital, as you help guide and nurture the next generation of culinary talent. As Head Chef, you are the spokesperson for the kitchen, embodying our ethos and inspiring both your team and our guests with your passion and skill. You will coordinate closely with the General Manager, ensuring the seamless integration of kitchen and front-of-house operations. Together, you will create a dining experience that is not only delicious but also imbued with the good vibes and exceptional service that Le Bab is known for. Administrative duties, including roster management and performance reporting, are supported by our Head Office, allowing you to focus on what you do best. This position offers a high level of autonomy and the chance for substantial reward, suitable for candidates with at least 2 years of experience in a similar leadership role. Job Responsibilities Few of you job responsibilities will be: - Oversee all aspects of the kitchen, ensuring high standards of food preparation and presentation - Assign responsibilities to kitchen staff and ensure all tasks are completed effectively - Manage and lead the kitchen during peak hours to maximise efficiency and ensure timely preparation of dishes - Conduct daily team briefings and maintain records of kitchen operations and staff performance - Organise and record team training, ensuring all kitchen staff are up-to-date with culinary skills, safety protocols and other related training given by HR - Keep track of staff training progress and compliance is 100% at all times (Atlas and other related training given), ensuring training is completed and recorded - Ensure rigorous cleaning schedules are adhered to and maintain the equipment, backed up with daily checklists - Provide guidance and coaching to kitchen staff, fostering their professional growth - Conduct yearly appraisals (Performance Review) of your kitchen staff, setting SMART goals and reviewing progress twice a year: January and July - Ensure staff schedules are correctly updated and approved daily, balancing workload and efficiency - Keep labour costs in line with Le Bab’s targets - Ensure all kitchen staff maintain company standards in every aspect of their work: dress code, following SOPs, following Health & Safety regulations, etc - Encourage the kitchen team to exceed company targets, maintain the cost of products (GPs) and reduce waste - Maintain high standards of health and safety, ensuring all regulations are consistently met. - Oversee the orders, ensuring inventory is managed and rotated efficiently, keeping the stock low and using FIFO at all times
As a chef at Le Bab, you will play a crucial role in the culinary team, ensuring the highest quality of food is prepared and served to our valued guests. Working in a fast-paced and busy restaurant environment, you will be responsible for preparing, cooking, and plating a wide variety of dishes with precision and consistency. Your ability to work efficiently, maintain kitchen hygiene, and collaborate with team members is essential to the success of our establishment. Key Responsibilities: Food Preparation: Follow recipes and portion control guidelines to prepare and assemble ingredients for various dishes. Prepare mise en place to ensure a smooth service. Prepare staff food when instructed to do so. Cooking: Execute cooking techniques with precision, including grilling, sautéing, frying, baking, and more. Monitor food temperatures and cooking times to maintain food safety standards. Plating and Presentation: Create visually appealing and consistent plates by following established plating guidelines. Quality Assurance: Maintain high food quality standards by tasting and adjusting seasonings as needed. Notify kitchen leadership of any quality or consistency issues. Team Collaboration: Work closely with other kitchen staff members to ensure a smooth flow of orders during peak service times. Communicate effectively with the kitchen team and waiters to fulfill guest orders accurately and promptly. Ensure a welcoming environment to new staff, providing training and answering any questions they may have. Accept feedback from senior chefs and owners respectfully. Cleanliness and Sanitation: Adhere to food safety and sanitation guidelines, including proper handling of food, equipment, and kitchen surfaces. Keep the work area clean and organized throughout the shift. Inventory Management: Assist in inventory control by reporting low stock levels and assisting in stock rotation. Properly label and date all food items to prevent waste. Adaptability: Be able to handle high-stress situations, adapt to changing menu items, and manage multiple orders simultaneously. Accept new dishes, ideas and strategies.

Final responsibility for smooth running of service, exceptional guest experience and management of FOH will fall to you, as well as events in some venues. In addition, simultaneously achieving target KPIs and improving customer satisfaction is a continuous demand. Administrative functions are supported by Head Office and include rota management, payroll, performance reporting and reservations management, A lot of responsibility will be expected of you, but with it the chance of autonomy and reward. Candidates should therefore have experience (2+ years) of leading FOH teams as GM or AGM.
