As the Restaurant Supervisor you will be working across our quick service restaurant and our outside terraced restaurant. Manage portion control and wastage to achieve margin targets as set by management. Be able to work in a small space, in front of the guests. Be able to work clean and tidy, to make sure that you minimize the hassle of small spaces. Manage kitchen processes so that food is delivered to the table in a timely manner as required by the front of house. Work closely with Managers to ensure smooth cooperation between the departments. Maintain high standards of cleanliness and food standards in the kitchen in order to achieve 5/5 food standards ratings. Ensure all required compliance forms are filled out correctly and in a timely manner. Manage kitchen processes to minimise wastage Complete stocktakes as required. Manage stock levels to avoid over-ordering. Maintain kitchen equipment to a high standard, carrying out regular cleaning as required. PERSON SPECIFICATION Experience Minimum one year of experience in charge of a section Minimum one year with an open kitchen and be able to have direct contact with guests – useful but not essential Skills & interests Proven skills in food presentation and flavor pairings Fluent in English; spoken Italian is useful but not essential. The Red Shield pub is set to open in Spring 2024 in Waddesdon. We are looking to appoint key roles now in order to invest time in training and preparation for this exciting new opening in the village. A sister venture to the well established Five Arrows Hotel, the Red Shield will provide another opportunity for dining and entertaining for locals and visitors to Waddesdon Manor. The Pub Manager understands their role as an ambassador for Red Shield Pub and the Rothschild Foundation and displays pride in our products, services, and delivery of exceptional customer service, maintaining the high standards of food service in keeping with Waddesdon’s reputation. As a Pub Manager, you will ensure the smooth launch and running of the establishment; • Responsible for all daily operational aspects of the Red Shield • Maintain close control of wages and GP within budget • Provide excellent customer service, making every visitor’s experience remarkable and unique. • Ensure that the serving of food is timely, consistent, and to the highest possible standard. Ensure that all discrepancies are accounted for and reported to the General Manager (Hospitality) within 24 hours. • Checking and balancing of staff and petty cash floats and the ordering of extra floats when needed from the Accounts Department. Hours: 48 hours per week, on a seven day rota to include weekends. Evenings and split shifts as required by the business.
