Key Responsibilities: -Part Time/Full time . Main objective would be to assemble sandwiches in an efficient and clean work space. Prepping ingredients, portioning meats, and preparing sauces. • Ingredient Preparation: Efficiently prepare and portion house-made meats, vegetables, and other ingredients according to recipe standards and specifications., • Sanitation and Hygiene: Maintain a high standard of cleanliness and sanitation in the prep area, adhering to food safety regulations and ensuring a safe working environment., • Stock Management: Monitor ingredient levels, rotate stock, and inform the chef if supplies need to be reordered., • Recipe Adherence: Follow recipes and prep lists accurately to ensure consistency and quality of all ingredients and finished products., • Equipment Maintenance: Clean and maintain kitchen equipment, including slicers, mixers, and knives, ensuring they are in proper working condition., • Team Collaboration: Work closely with kitchen staff to coordinate prep tasks and support a smooth workflow throughout service hours., • Prior experience as a prep cook or in a similar role is preferred., • Knowledge of food safety and sanitation practices., • Ability to work early morning hours and manage time effectively., • Strong attention to detail and ability to follow recipes and instructions., • Good physical stamina and the ability to handle repetitive tasks and lift heavy items., • Collaborate with team members to ensure a smooth and efficient kitchen operation., • Opportunity to be a part of a unique and innovative food concept in NYC., • Friendly and supportive work environment., • Competitive pay and potential for growth within the company., • A chance to help shape the future of Brown Bag Sandwich Co. as we expand and evolve., • $17-19/hour, • Estimate of $100-$200 per week in tips, depending on seasonality

Responsibilities • Assist with basic fish handling, including trimming, portioning, and packaging, • Support the preparation and assembly of to-go sushi items (rolls, donburi, sashimi packs, etc.), • Maintain high standards of cleanliness and sanitation in all work areas, • Provide friendly and professional customer service at the counter, • Operate the register accurately and efficiently, • Restock display cases and assist with inventory and product rotation, • Receive and inspect deliveries to ensure quality and accuracy, • Follow store procedures, food safety protocols, and daily operational checklists, • Collaborate with team members to ensure smooth and efficient workflow Qualifications Required • Strong attention to detail and ability to follow instructions, • Reliability, punctuality, and professionalism, • Ability to work in a fast-paced environment while maintaining accuracy, • High standard of hygiene and food safety awareness, • Positive attitude and willingness to learn Preferred • Experience in seafood handling, fish markets, or food service, • Basic knife skills or kitchen prep experience Customer service or retail experience • English and/or Japanese communication ability, • Interest in Japanese cuisine or seafood

Prep Cook Key Responsibilities: Wash, cut, portion, and label vegetables, meats, and aromatics. Prepare daily batches of sauces, broths, and marinades following San Wei SOPs. Assist with dumpling and noodle prep (portioning fillings, dough setup, etc.). Maintain cleanliness of prep area; follow all food safety and sanitation rules. Organize walk-in and dry storage; ensure FIFO rotation. Support kitchen team by keeping ingredients stocked and ready for service. Prep Cook Qualifications: Basic knife skills and ability to follow recipes accurately. Able to lift 30–40 lbs and stand for long periods. Prior experience preferred but not required; training provided. Cook Key Responsibilities: Cook noodles, dumplings, and entrées according to San Wei recipes and plating standards. Operate woks, noodle boilers, steamers, fryers, and other equipment safely. Maintain clean and organized station throughout service. Communicate with expo and kitchen team to ensure smooth service flow. Monitor food quality, portion control, and ticket times. Assist with daily opening/closing duties and restocking. Cook Qualifications: Fast-casual or Asian kitchen experience preferred. Ability to work in a fast-paced environment. Strong attention to detail and consistency. Food safety knowledge; training provided.
