KNOWLEDGE AND RESPONSIBILITIES • Responsible for frying donuts, placing toppings, and decorating on needed pastries and bread, • Carrying out operations and productions that takes place in the kitchen, • Baking recipes and preparing all desserts, • General Oven Duties (Checking dough conditioner), • Preparing all needed materials and ingredients, • Responsible for scaling and shaping of all breads, loaves, and pastries, • Sanitization procedures, maintaining overall cleanliness of work station and kitchen, • General knowledge of production methods and organization of bread production, • Must be able to prioritize and finish all tasks assigned for the daily baking, • Ensuring work place is safe and hygienic for all employees and guests, • Receive, stock, and store food in designated containers and storage areas in an organized manner, • Inform supervisors when equipment is not working properly and manage when food supplies are getting low, • Complete various reports for records such as production, usage, and waste, • Perform other related duties as assigned WHAT YOU NEED TO HAVE • Knowledge on food producing process, sanitization, quality program, • Knowledge on food producing technique, food microbiology, and food sanitary safety practice/procedure, • Ability to work weekends and holidays., • Food safety, food labeling, nutrition related knowledge (include FDA), • Confectionery/Foods major recommended, • Food Handler's Certificate, preferred, • Effective communication skills and ability to work in a team environment, • Ability to multi-task, • Multiple priority management abilities, • Feedback is a gift! The Cook will assist in managing and performing food and equipment ordering and inventory. The ideal candidate should have experience in the safe and sanitary handling and storage of all food items in accordance with New York State and New York City Department of Health regulations. He/she will be responsible for the general supervision of kitchen area, including overall cleanliness, maintenance of equipment, utensils, and supplies, and the ability to provide instruction to inexperienced trainees. Evening and Weekend Hours may be required. ESSENTIAL DUTIES & RESPONSIBILITIES: • Assist in the management and monitoring of all aspects of the development of a nutritious daily menu and meal preparation for 200 homeless individuals including those with special diets., • Prepare low-fat, low-sodium, vegetarian and soft meal options to meet special dietary and medically prescribed needs of residents., • Assist in managing and performing food and equipment ordering and inventory., • Daily Equipment Logs, Food Logs and Waste Logs., • Safe and sanitary handling and storage of all food items in accordance with New York State and New York City Department of Health regulations. (Including Weekly Deliveries need to be Stored, Label, and Dated also must be able to lift 25lbs.), • Responsible for the general supervision of kitchen area, including overall cleanliness, maintenance of equipment, utensils, and supplies, and the ability to provide instruction to inexperienced trainees., • Assist in the implementation of a Daily Cooking and & Nutrition (Daily Living Skills) training curriculum for Shelter Residents to prepare them for independent living, • Cook and serve 3 meals per day to 200 shelter residents according to the census and the menu., • Attend staff meetings, conferences, group supervision, and training as needed., • Kitchen cleanliness, and equipment maintenance according to NYC and NYS - DOH guidelines and program requirements., • Prepare and serve meals at SUS Multiple Sites if necessary., • A work schedule that includes some weekend and evening hours will be required., • Comply with and enforce all SUS Corporate Compliance and Employee Policies, Procedures, and Protocols., • Comply with, enforce, and carry out all SUS Incident Management Policies, Procedures, and Protocols as appropriate. REQUIREMENTS: • Minimum of one year of experience in all aspects of food preparation and kitchen management within a large institutional or commercial setting. REQUIRED EDUCATION AND EXPERIENCE • NY State Food Handlers Certificate required, additional nutritional training, and certificates preferred.
