



Prep Cook Key Responsibilities:
Wash, cut, portion, and label vegetables, meats, and aromatics.
Prepare daily batches of sauces, broths, and marinades following San Wei SOPs.
Assist with dumpling and noodle prep (portioning fillings, dough setup, etc.).
Maintain cleanliness of prep area; follow all food safety and sanitation rules.
Organize walk-in and dry storage; ensure FIFO rotation.
Support kitchen team by keeping ingredients stocked and ready for service.
Prep Cook Qualifications:
Basic knife skills and ability to follow recipes accurately.
Able to lift 30–40 lbs and stand for long periods.
Prior experience preferred but not required; training provided.
Cook Key Responsibilities:
Cook noodles, dumplings, and entrées according to San Wei recipes and plating standards.
Operate woks, noodle boilers, steamers, fryers, and other equipment safely.
Maintain clean and organized station throughout service.
Communicate with expo and kitchen team to ensure smooth service flow.
Monitor food quality, portion control, and ticket times.
Assist with daily opening/closing duties and restocking.
Cook Qualifications:
Fast-casual or Asian kitchen experience preferred.
Ability to work in a fast-paced environment.
Strong attention to detail and consistency.
Food safety knowledge; training provided.
