This role ensures the restaurant operates at a consistently high standard - delivering exceptional guest experiences, maintaining brand integrity, and achieving strong financial and operational results in a fast-paced airport environment. Key Responsibilities Operations & Restaurant Leadership • Lead all daily restaurant operations, including opening and closing execution, • Ensure consistent adherence to operational standards, checklists, and brand expectations, • Maintain full readiness of the restaurant for all service periods, including peak airport traffic, • Provide clear direction to management team and frontline staff across all shifts, • Maintain strong visibility on the floor to ensure execution and service consistency Financial Performance & P&L Ownership • Full ownership of restaurant P&L, including revenue, labor, food cost, and controllable expenses, • Monitor and analyze daily/weekly financial and operational performance, • Implement strategies to drive sales growth, efficiency, and profitability, • Control labor scheduling and deployment to align with business demand, • Identify opportunities to reduce waste and improve margins without compromising quality Team Leadership & Development • Recruit, interview, hire, and retain high-performing restaurant talent, • Lead onboarding, training, and continuous development programs, • Schedule and deploy staff effectively to meet operational needs, • Conduct performance reviews, coaching conversations, and corrective actions when needed, • Foster a culture of accountability, engagement, and recognition, • Ensure all HR, compliance, and onboarding/offboarding processes are completed accurately Guest Experience & Brand Standards • Ensure all guests receive consistent, high-quality Eataly hospitality, • Maintain strict adherence to brand standards for food quality, presentation, and service, • Resolve guest concerns quickly, professionally, and with sound judgment, • Drive initiatives that enhance guest satisfaction and repeat traffic, • Support marketing and promotional programs to increase visibility and revenue Inventory, Vendors & Operations Support • Oversee ordering, receiving, inventory management, and stock levels, • Manage vendor relationships and ensure timely resolution of supply issues, • Ensure proper invoice processing and cost tracking accuracy, • Monitor equipment performance and coordinate maintenance and repairs, • Support sustainability initiatives, including waste reduction and donation programs Safety, Compliance & Standards • Maintain full compliance with all health, safety, and sanitation regulations, • Ensure team adherence to all operational safety procedures and training requirements, • Prepare for and support audits, inspections, and compliance reviews, • Maintain a clean, safe, and organized restaurant environment at all times Work Environment & Expectations • Fast-paced, high-volume airport restaurant environment, • Requires flexibility to work opening, mid, and closing shifts as needed, • Hands-on leadership role with significant floor presence expected, • Directly reports to senior operations leadership (Director of Operations or equivalent) What You Bring • 5–7+ years of progressive restaurant leadership experience, • Minimum 3+ years of full P&L responsibility in a high-volume environment, • Strong operational leadership and team-building capability, • Proven ability to manage labor, cost controls, and financial performance, • Excellent communication, decision-making, and problem-solving skills, • Ability to thrive in a high-demand, guest-focused environment, • Familiarity with restaurant systems, reporting tools, and operational controls Avolta, including Dufry, HMSHost Corporation, Hudson, and affiliates (“the Company”), is an equal opportunity employer.
