We’re looking for an enthusiastic and reliable Lead Baker Assistant to support in overseeing the Roll Boys production team, with a strong focus on product quality and central kitchen operations. This is a hands-on role centred around rolling, proofing, baking, and finishing our signature cinnamon rolls, while also helping manage day-to-day production in our central kitchen. You’ll play a key role in ensuring every batch is consistent, high-quality, and produced efficiently to meet demand. This role is split across 3 days in the central production kitchen and 2 days at our trading site, giving you full visibility from production through to final service. Key Responsibilities • Support the management of central kitchen production, ensuring smooth daily operations and output, • Oversee and assist with proofing processes, ensuring dough reaches optimal rise and consistency, • Support baking operations, managing timing, temperature, and oven performance, • Ensure the final product meets Roll Boys quality standards - texture, bake, finish, and presentation, • Help coordinate production schedules, tray organisation, and workflow efficiency, • Assist in rolling, shaping, and assembling cinnamon rolls when required, • Maintain a clean, safe, and well-organised kitchen environment at all times, • Work across both production and trading site, supporting consistency from kitchen to customer, • Work closely with the Lead Baker to uphold and continuously improve quality standards Skills & Qualities We’re Looking For • Strong understanding (or willingness to learn) proofing, fermentation, and baking techniques, • Ability to support and manage production flow in a central kitchen environment, • Excellent attention to detail, especially in product consistency and finish, • Comfortable working across both kitchen production and live service environments, • Reliable, proactive, and confident working within a team, • Able to stay organised and maintain standards in a fast-paced setting, • Strong commitment to cleanliness and food safety Requirements • Previous kitchen or bakery experience is essential (training provided on Roll Boys methods), • Comfortable with physical work, including standing for long periods and lifting, • Must be available to work weekends and bank holidays (trading site shifts), • Flexible with working hours, including early mornings and high-demand production periods What We Offer • £16/hour, minimum 35 hours per week, • Hands-on training in high-quality cinnamon roll production, • Opportunity to develop skills across production and service environments, • A chance to grow within a fast-scaling, quality-driven brand, • Supportive team culture with a strong focus on craft and consistency If you’re passionate about quality baking and want to be part of a growing brand, please apply!!!
