Hatch on the Harbour opened in July 2020. We serve seafood street food directly on the hustle and bustle of the Weymouth harbour. Seafood is best served fresh, so we source ours straight from local inshore fishing boats, working alongside Weyfish harbourside fishmonger and the local fishing fleet we create ever changing menus that change with the tides.
The fishing industry has been central to Weymouth's economy and culture for generations. Today, most of the local fleet are day boats, fishing the inshore waters with lines, nets and pots, the most sustainable of fishing methods, producing little by-catch or discards. Most boats are owner-operated, single handed, landing their catch daily on Custom House Quay.
We are looking for an experienced sous chef to join the team, where you will work alongside our Head Chef and the rest of the team. We are looking for a candidate with a proven history within this role, who can display professionalism, and a positive attitude towards growth and development, deliver and maintain excellence in working towards our common goals.
The Role:
As Sous Chef, you will need to demonstrate the ability to manage the kitchen in absence of the Head Chef and be highly organised. You will need to show a passion for utilising the finest local produce, fresh ingredients, and seafood. Experienced with a broad variety of food knowledge and passionate about seafood and street food-inspired cuisine essential.
Responsibilities to include: - Assist the Head Chef in overseeing the daily operations of the kitchen - Help create and prepare high-quality dishes according to the menu and recipes - Ensure food is prepared and cooked to the highest standards of quality and presentation - Supervise and train kitchen staff, providing guidance and support as needed - Maintain a clean and organized kitchen environment - Monitor inventory levels and assist with ordering supplies as necessary - Adhere to all food safety and sanitation regulations - Collaborate with the Head Chef to develop new menu items and specials - Assist with menu planning, costing, and portion control - Requirements: - Previous experience in a similar role within the hospitality industry - Strong leadership skills with the ability to effectively supervise a team - Knowledge of food safety practices and proper food handling techniques - Excellent culinary skills with a focus on quality and presentation - Ability to work in a fast-paced environment while maintaining attention to detail - Flexibility to work evenings, weekends, and holidays as required - Strong communication skills to effectively interact with staff and management - Interviews to be held throughout February.
