Black Bear Burger is not your typical burger joint – our ethos is ‘simple, done well’ – we don’t mess around with gimmicks. We use the best beef we can get our hands on and everything in our burgers is there to enhance the flavour of that beef! We've built a huge following of fans (both in person and online) and get daily burger pilgrims travelling from across the country to try our food. We've featured on Netflix's Million Pound Menu and most recently BBC's Masterchef the Professionals. As a company we currently have six sites with more on the horizon. We're on a really great journey, and at this 'early' stage we're looking to bring pro-active, dynamic and career driven people on board to grow with us on that journey. THE ROLE As Sous Chef, you'll be working closely with the Head Chef in leading your team from the front, drawing on previous chef and management experience. We want to bring in someone who is going to be proud of what we do, as we're continually working hard to be top of our game in the competitive burger market. Key responsibilities for the role are to assist the Head Chef in: Running the service element of the kitchen (cooking standards, prep levels, managing the team) Hygeine and Cleanliness levels + Health and Safety Standards (Due Diligence, Record Keeping, overall compliance.) Our Kitchen Assistants/Team Members are responsible for preparing our food offering to the highest quality and standards. Their role is crucial in maintaining a smooth and efficient operation in the kitchen. Opening hours: from 10.00am to 2.00am from Monday to Sunday What you'll do at Pasta Evangelists: - Ensuring that the kitchen is set up and ready for each service with the right amount of prepared Pasta Sauces and other ingredients that ensure the right amount for quick service but does not negatively impact food costs i.e. wastage. Including preparing par levels in the pre-prepared cold delivery fridge. - Wear a full smart clean uniform to the brand standard at all times whilst on shift and protective clothing as required. - Ensure the full Pasta Evangelists Standard is adhered to, thereby ensuring our Pasta and other Products are kept to the highest possible standard for Best product quality to our customer. - To ensure that the kitchen is exceptionally clean and complies with all Health and Safety / Quality and Safety regulations. - To keep an eye on the Availability and Inform the Team leaders and wider team in advance. - Document and keep a record of information on food as appropriate to the company policy and effective date labelling and make sure stock rotation principles (FIFO) are fully adhered to. - Ensure that all par levels are maintained. - Ensure any food wastage is recorded accurately. - Utilise the SOP to maximise the quality and speed of food readiness. - For all equipment i.e. Fridges, Pasta Boiler, Ovens, Microwaves etc ensure that the right temperature records are kept and the correct procedures are followed for safe food handling. - Ensure all equipment is maintained to the SOP standard. This is what our bakery was founded on and remains core to what we do & what we’re known for. We occupy a beautiful new retail space in Canal Place overlooking Regents Canal in London Fields. Our focus is now solely on our retail offer and we are looking for an exceptional, creative pastry chef to help manage, maintain and really drive our viennoiserie & pastry section. Some bread experience would also be preferred although this is not mandatory. We need someone who is experienced in all areas of the production process from mixing to proving to baking and finishing. A minimum of 4 years experience in a professional kitchen or bakery is required. - This position will start each day at 05.30 and finish by 13.30. - We are currently open 5 days a week with all full-time employees working the same 5 days (Wednesday through to Sunday. - We are looking for individuals who thrive under pressure and have the skill, creativity and passion to embrace new challenges as we continue to grow.
