Sushi Chef Job Title: Sushi Chef Department: Kitchen Reports To: Head Chef / Kitchen Manager Employment Type: Full-time / Part-time Job Summary We are looking for an experienced and passionate Sushi Chef to join our kitchen team. The successful candidate will be responsible for preparing high-quality sushi and Japanese dishes while maintaining excellent standards of food safety, hygiene, presentation and consistency. Key Responsibilities • Prepare sushi, sashimi, nigiri, maki, uramaki and other Japanese dishes to a high standard., • Prepare and handle fresh fish, seafood, rice, vegetables and other ingredients safely., • Ensure sushi is presented attractively and consistently according to restaurant standards., • Prepare sushi rice, sauces, garnishes and other ingredients required for service., • Maintain excellent food hygiene and food safety standards at all times., • Check the quality and freshness of ingredients before preparation and service., • Store food correctly and monitor temperatures and use-by dates., • Keep sushi preparation areas, equipment and refrigerators clean and organised., • Minimise food waste and use ingredients efficiently., • Follow portion-control and recipe standards., • Work efficiently during busy service periods while maintaining quality., • Communicate effectively with the Head Chef and kitchen team., • Assist with stock control, ordering and daily kitchen preparation when required., • Follow all company health, safety and hygiene procedures. Requirements • Previous experience as a Sushi Chef or in a professional Japanese kitchen., • Good knowledge of sushi preparation and Japanese cuisine., • Strong knife skills and knowledge of fish preparation., • Good understanding of food hygiene and allergen requirements., • Ability to work under pressure in a busy restaurant environment., • Good attention to detail and presentation., • Reliable, organised and able to work effectively as part of a team.
