We are currently seeking a skilled, experienced and motivated Chef de Partie – Gravy & Mains Section with strong expertise in North and South Indian curries and gravies for our restaurant in Central London. The role demands consistency, precision, and the ability to deliver high-quality main-course dishes in a fast-paced, fine-dining environment. Key Responsibilities • Take full responsibility for the preparation and execution of North and South Indian curries, gravies, sauces, and main course dishes., • Ensure consistency in flavour, taste, and presentation meet high standards., • Manage section mise en place, batch cooking, and daily production efficiently and during busy periods., • Ensure correct stock rotation, labelling, storage in line with food safety standards., • Support junior kitchen staff and assist in their training when required., • Coordinate closely with Head chef and work collaboratively with other sections to ensure smooth kitchen operations. Requirements • Proven experience as a Chef de Partie or strong Commis Chef ready to step up., • Strong knowledge of sauce preparation, stocks, reductions, and main course cooking techniques., • Ability to work under pressure in a fast-paced environment., • Excellent time management and organizational skills., • Understanding of food safety, hygiene, and HACCP standards., • Passion for quality food and teamwork.
