Core Responsibilities
- Food Preparation: Expertly cutting fish, preparing sushi rice, and assembling various sushi types, including maki, nigiri, and sashimi.
- Safety & Hygiene: Ensuring impeccable cleanliness of the workspace,, strict compliance with food safety regulations, and proper handling of raw ingredients.
- Quality Control: Inspecting raw fish, produce, and other ingredients for quality before preparation.
- Menu Development: Contributing to, or creating, new sushi, appetizers, soups, or sauces.
- Inventory Management: Monitoring stock levels and placing orders for fresh supplies.
- Customer Service: Preparing custom orders and providing an exceptional dining experience, sometimes in a front-facing, interactive environment.
Key Requirements & Skills
- Experience: Proven experience as a Sushi Chef or in a Japanese restaurant (often 3–5 years for senior roles).
- Technical Skills: Advanced knife skills and deep knowledge of fish cutting techniques.
- Efficiency: Ability to work quickly and precisely under pressure.
- Physical Stamina: Ability to stand for long hours and potentially work early morning shifts.
- Certification: Formal culinary training or certifications are often preferred.
Typical Working Conditions
- High-pressure, fast-paced kitchen, often in full view of customers.
- Shifts may start early for fish sourcing and preparation.
