What You’ll Do As the Chef de Pass, your responsibilities will include: Pre-Service • Setting up the pass with clean plates and ensuring the hot pass is ready with trays, cutlery, and hot plates., • Checking printers in kitchen sections and the pass; preparing spare rolls., • Preparing oshibori and service cloths., • Attending the daily pre-service briefing. During Service • Receiving dishes from the chef and clearly communicating table numbers and items to runners., • Crossing off items as they leave the kitchen and tracking the flow of dockets., • Coordinating hot and cold sections and informing the chef when courses are clear to go., • Monitoring timings, anticipating delays, and guiding runners on refills and priorities., • Remaining focused and composed during both busy and quiet periods. End of Service • Cleaning and emptying the hot pass., • Assisting porters with plate and cutlery organisation., • Resetting the pass and trays for the next service.
