Supervisa el cumplimiento de las normas de comportamiento y cortesía definidas en el Capítulo II por parte del personal de la partida a su cargo. Aclara e informa sobre posibles dudas. Se comunica directamente con el/la jefe/a de cocina y su segundo. Elabora y termina los platos específicos de la partida de la que se responsabiliza. Pone esmero en la presentación y montaje de las piezas solicitadas. Tiene la responsabilidad de mantener la partida asignada en perfecto estado de orden y limpieza incluido su maquinaria. Titulación: FP Grado Medio – Técnico en Cocina y Gastronomía, o estudios afines. Experiencia de 2 años en un puesto similar y en hoteles. Otros conocimientos:Habilidades trabajo en equipo. Misión del puesto del trabajo Responsable de apoyar y colaborar con el/la Chef en planificar y organizar el conjunto de actividades y recursos propios del departamento de cocina con el fin de asegurar un servicio y atención de calidad para cubrir las expectativas del cliente, de garantizar la seguridad e higiene alimentaria en todo el servicio de producción de los alimentos que se ofrecen al cliente y liderar al equipo de trabajo del área promoviendo ambiente de cooperación, sentimiento de satisfacción y mayor rendimiento. Tus principales funciones serán: Supervisar las existencias de los productos de cocina, dentro de los límites de stocks definidos, según los porcentajes de ocupación de hotel y realizar en consecuencia los pedidos y/o compras a proveedores homologados. Conocimiento de la normativa higiénico-sanitaria aplicable al departamento y prerrequisitos de APPCC que le sean de aplicación. Dirigir, supervisar y planificar el conjunto de actividades del departamento de cocina y del personal a su cargo. Velar y exigir que todos los trabajos ejecutados por sus subordinados o por personal ajeno a la empresa se realizan siguiendo las medidas de prevención y protección establecidas y de acuerdo con el buen criterio profesional, sin que ello presuponga delegación de responsabilidad. . Poner en conocimiento de su responsable jerárquico los riesgos y peligros que haya detectado el mismo o los trabajadores de su área, así como las sugerencias en materia preventiva le hagan llegar los trabajadores bajo su mando. Mantener en correcto estado de conservación, orden y limpieza el área de trabajo, equipos, herramientas y otros elementos a su cargo advirtiendo de inmediato a su superior directo, o en su caso, al Coordinador de prevención, sobre los peligros que observe.
