Misión del puesto de trabajo Será la persona responsable de supervisar, organizar y dirigir la operación de la cocina, en búsqueda de la excelencia y cumpliendo los estándares de calidad, así como la satisfacción total de nuestros clientes. Responsable de administrar los recursos de la empresa tanto en materia prima, como en insumos y en recursos humanos. Tus principales funciones serán: Creación de cartas, escandallos, asignación de precios en carta, etc. Participar en la gestión y planificación económica del servicio para un correcto control del presupuesto y costes del departamento. Dirigir, supervisar y organizar el conjunto de actividades de las cocina del restaurante y su respectivo equipo. Asegurar el cumplimiento de la normativa higiénico-sanitaria aplicable al departamento y prerrequisitos de APPCC que le sean de aplicación. Gestionar la conservación, almacenamiento y rendimiento de mercancías y materias primas. Supervisar y controlar el mantenimiento y uso de maquinaria, materiales utillaje, etc. del departamento realizando los correspondientes inventarios y propuestas de reposición. Control de stock y gestión de pedidos. Reportes al Director de A&B y Director general del complejo de todos los informes solicitados. Tener informada a la dirección de las incidencias y novedades. Control y consecución del presupuesto anual del departamento, etc. Colaborar en la instrucción del personal a su cargo y realizar la formación específica del personal de nueva incorporación. Velar y exigir que todos los trabajos ejecutados por sus subordinados o por personal ajeno a la empresa se realizan siguiendo las medidas de prevención y protección establecidas y de acuerdo con el buen criterio profesional, sin que ello presuponga delegación de responsabilidad. . Poner en conocimiento de su responsable jerárquico los riesgos y peligros que haya detectado el mismo o los trabajadores de su área, así como las sugerencias en materia preventiva le hagan llegar los trabajadores bajo su mando. Mantener en correcto estado de conservación, orden y limpieza el área de trabajo, equipos, herramientas y otros elementos a su cargo advirtiendo de inmediato a su superior directo, o en su caso, al Coordinador de prevención, sobre los peligros que observe.
