We are seeking an exceptional Head Sommelier to steward and elevate our wine department to the highest level. This role demands an individual of exceptional taste, authority, and vision—someone capable of refining a distinguished wine list while shaping its future direction. You will have ownership of the department, rigorous cellar stewardship, and the cultivation of a polished sommelier team dedicated to delivering seamless, intuitive, and discreetly exceptional service, with the opportunity to earn up to £70,000 p/a! What you will do: What We Are Looking For? • A minimum of 2+ years of experience as a Head/Senior Sommelier in a high-calibre fine dining or luxury hotel environment., • WSET Level 3 or 4 (Diploma) or CMS Certified/Advanced Sommelier preferred., • Expertise of Old and New World wines; experience with [Sake/specific regional focus if applicable] is a bonus., • A composed and charismatic leader, distinguished by exceptional communication, assured initiative, and a calm, professional presence under pressure.

Assistant Head Sommelier - Gymkhana Salary - Up to £50,000 per annum. The successful candidate will be personable, passionate and have exceptional wine knowledge. The Restaurant Operating in Mayfair for over a decade, Gymkhana is inspired by the bars, social, sports, and members’ clubs of the British Raj in India. It serves contemporary Indian cuisine using seasonal British ingredients, with a strong focus on the tandoori oven. The Position As Assistant Head Sommelier, you will be responsible for delivering the highest levels of service and an exceptional guest experience within the restaurant and private dining rooms. You will recommend and sell wines to customers both to complement their tastes and to pair with their menu choices. The successful Assistant Head Sommelier will have: An engaging and personable nature; A passion for hospitality and delivering an exceptional guest experience; Prior experience as an Assistant Head Sommelier or Senior Sommelier within a quality restaurant; WSET or equivalent Sommelier qualification; A professional and confident communication style with fluent English language ability; Proven ability to lead, inspire and motivate a team; An excellent knowledge of food and beverage; The eagerness to continually learn and develop your career within hospitality.

Join Firebird's SOHO Front of House Team as Waiter / Waitress! We use ancient open-fire cooking techniques to craft unique flavors and ingredient combinations inspired by the Mediterranean coast.
