We are excited to be recruiting for an amazing Head Chef, who has experience with High Volume to join Daisy Green Collection WHO WE ARE The Daisy Green Collection brings relaxed and buzzing Australian food and coffee culture to London. Through individually designed cafes and restaurants, we create iconic spaces that become local destinations and meeting points for our surrounding residents, workers and visitors. Our food is carefully sourced and cooked in house from scratch. Menus are inspired by our founders, Prue Freeman, childhood at home on her sheep farm and hot summers on the beach. Food combines simple fresh Mediterranean ingredients with POPs of Asian flavours and textures. There is an overriding sense of freshness, quality and simplicity. Over the last decade the business has grown organically to include an exciting mix of cafes, restaurants, secret underground gardens, canal boats and shipping containers. We are looking for a hardworking, proactive and talented junior sous chef who is ready to progress into a sous chef position. You will help lead and support the kitchen team, bring out the best in junior members of the brigade and contribute to a positive, enjoyable working environment. Pastry / Baker Chef de Partie (Pastry, Viennoiserie or Hybrid) Location: Mayfair, London Start: ASAP Salary: £32,000–£35,000 per year (DOE) including service charge Hours: Full-time, daytime shifts with rotating weekends. Bakery-focused shifts run about 6/7am–3/4pm, and pastry-focused shifts about 7/8am–4/5pm. A luxury pâtisserie in the heart of Mayfair is looking for a talented chef to join its pastry and bakery kitchen. Family-owned, with decades of pastry heritage behind it, the brand brings that tradition to a modern, high-end London concept. It’s growing quickly, with a second Mayfair site on the horizon. We’re open to how this role takes shape. You might be a pastry chef who wants to master lamination, or a baker who wants to refine your pâtisserie and finishing. You might also want to work across both. Either way, you’ll work directly with the Head Pastry Chef, build skills on both sides of the kitchen, and help create new products as the brand grows. Choose your focus: • Pastry focus. Craft refined pastries, desserts, cakes and afternoon tea, with cake decoration and finishing at the core., • Bakery focus. Own the daily viennoiserie and bread production: croissants, pain au chocolat, Danish, and enriched and sourdough breads., • Hybrid. Split your time between both sections and develop as an all-round pastry and bakery chef. Responsibilities: • Produce premium pastries, desserts, cakes, viennoiserie and breads to exceptional standards of quality, consistency and presentation, depending on your focus, • Manage laminated doughs, fermentation and baking schedules, or pastry production and finishing, so everything is ready for service, • Work with the Head Pastry Chef to develop new seasonal and signature items, • Run your section efficiently, with organised mise en place and production planning, • Support stock control and ordering, and maintain HACCP and food safety standards at all times, • Work closely with the wider kitchen team for a smooth, well-run operation What we’re looking for: • At least 2 years’ experience in pastry, bakery or both, in a luxury hotel, fine-dining restaurant, high-end pâtisserie or artisan bakery, • Strong technical skills in your specialism. That could be pastry, desserts and cake finishing, or lamination, fermentation and bread. About the role Honest Greens serves real, fresh food cooked from scratch every day. As a Grill Chef, you own the grill station: cooking our proteins and vegetables to order, to spec and on time, so every plate leaving the pass is consistent and full of flavour. You'll keep your station organised and safe through busy services and work closely with the rest of the kitchen team. Key responsibilities Running the grill station • Cook meat, fish, plant-based proteins and vegetables on the grill to recipe specs and correct core temperatures, • Hit ticket times during service and communicate clearly with the pass, • Check every dish for quality, portion size and presentation before it leaves the station, • Adapt to changes in order volume and stay calm under pressure Prep and stock • Complete daily mise en place for the grill: marinating, portioning and preparing garnishes and sauces, • Label, date and rotate stock using FIFO, and keep waste to a minimum, • Check deliveries for the station and flag shortages to the Head Chef before service Food safety and hygiene • Follow food safety, allergen and HACCP procedures, including temperature checks and records, • Prevent cross-contamination between raw and cooked foods and between allergens, • Clean and maintain the grill and station equipment to the cleaning schedule, • Report faulty equipment or hazards straight away Team • Support other stations when needed and help train new team members on the grill, • Complete opening and closing checklists for your station What we're looking for • At least 1 year of experience on a grill or hot section in a busy kitchen, • Confident cooking proteins to different temperatures and doneness, • Good knife skills and a solid understanding of food safety and allergens, • Level 2 Food Hygiene certificate (or willing to complete it), • Calm, organised and able to keep high standards during peak service, • Reliable, punctual and a strong team player, • Flexible availability, including weekends and evenings, • Right to work in the UK What we offer • Competitive hourly pay, paid every four weeks, • Weekly service charge paid through TiPJAR, • Free healthy staff meals on shift, ordered through the Mapal app, • Full paid training on our menu and kitchen systems, • 28 days' holiday, • Pension scheme, • Clear progression routes towards Senior Chef, Sous Chef and beyond, • A friendly, diverse team that cares about good food and each other
