Job Summary:
The role of the Chef de Partie at Secret Smokehouse is to work directly with the production team and with all chef tasks maintaining high hygiene standards in the production of ready to eat products.
The role requires the employee to work well in a team, sometimes under pressure and be able to deal with the artisan nature of the smoked fish that Secret Smokehouse produces here in East London.
The Chef de Partie is a really key role within the smokehouse and so the employee will need to have a fantastic work ethic but also someone who wants to be part of a fun and exciting team and arguably the best smokehouse in the UK supplying the top tier chefs and restaurants.
Roles and responsibilities:
• Production tasks: curing, smoking, pin-boning, slicing & prepping
• Preparation and packaging of ready-to-eat products such as patés, fish cakes and fish pies.
• Planning of chef production schedules to meet wholesale, retail and shop demand.
• Purchasing of required raw materials and packaging.
• Maintaining accurate product recipes.
• Product costing and cost reduction.
• Report all Quality Control, Health & Safety and Food Safety concerns or areas for improvement.
• Completing production and traceability records daily/weekly/monthly
• Working with Production Assistants & Kitchen Porters to keep the Smokehouse to EC standards and above (e.g. SALSA requirements)
• Stock rotation and labelling to ensure compliant storage of raw ingredients
