This role is a core pillar of consistency, craft, and leadership within the BAO kitchen 🔹 Purpose of the Role To take full ownership of a section and lead it with structure, care, and consistency. You run your area confidently during prep and service, guide junior chefs, and help protect BAO’s standards through disciplined organisation and clear communication. 🔪 Section & Service Control • Lead your section across prep, service, and close-down with confidence., • Maintain full knowledge of BAO’s recipes, techniques, flavour profiles, and specs., • Cook and plate with precision, consistency, and speed., • Oversee the timing and flow of dishes to keep service controlled., • Support the pass and step into leadership duties when required., • Coordinate closely with other sections to maintain smooth flow., • Raise risks early and offer solutions proactively. 🍱 Prep, Organisation & Standards • Keep mise en place sharp, accurate, and well-organised., • Maintain a tidy, efficient section and lead others in doing the same., • Anticipate prep needs, communicate counts, and support planning with Sous Chefs., • Ensure accurate portioning, storage, labelling, and rotation., • Uphold strict food hygiene, safety, and allergen procedures., • Support stock management through accurate prep and low waste. 🧑‍🤝‍🧑 Team Leadership & Culture • Guide CDPs and Commis with respect, clarity, and patience., • Support skill development through hands-on coaching and feedback., • Treat all teammates with kindness and fairness — especially under pressure., • Help maintain a calm, respectful, team-first culture., • Lead by example during service: organised, measured, and solutions-focused., • Participate actively in tastings, briefings, and development sessions. 🧭 Personal Conduct • Be a dependable, steady leader on your section., • Keep a professional, composed presence at all times., • Take feedback constructively and use it to grow., • Uphold BAO’s values in every interaction.

Fallow was founded by three individuals in May 2019, two chefs Jack Croft and William Murray, and career hospitality entrepreneur James Robson. As a Commis Waiter, you will support the front-of-house team in delivering outstanding service and ensuring every guest enjoys a memorable dining experience. Key responsibilities: • Act as the link between the kitchen and restaurant, ensuring clear and efficient communication throughout service., • Coordinate the flow of dishes from the kitchen to the dining room, ensuring food is delivered accurately and efficiently., • Check plates for correct presentation, garnishing, portioning and quality before they leave the pass., • Ensure dishes are complete and match the correct table and order., • Communicate with chefs and waitstaff to maintain smooth service and appropriate timing., • Monitor the pass and prioritise dishes during busy periods to help maintain an efficient service flow., • Identify and communicate any issues with food, orders or service promptly., • Assist the kitchen and restaurant teams wherever required during service., • Keep the pass and expediting area clean, organised and fully prepared throughout service., • Maintain high standards of hygiene, cleanliness and food safety., • Develop a strong understanding of the menu and dishes to confidently support both kitchen and service teams., • Follow all company policies, health and safety procedures and food hygiene standards. About you: • Ideally experienced in a fast-paced restaurant., • Comfortable working in a fast-paced environment and able to remain calm and focused during busy services., • Highly organised, with excellent attention to detail., • Passionate about food, hospitality and delivering an excellent guest experience., • A team player with a positive attitude and strong work ethic., • Able to prioritise tasks and manage multiple demands during service., • Experience using Toast or a similar restaurant POS system is desirable, but not essential., • Confident working on the pass or eager to learn the skills required to become an effective Expeditor.
