Chargal is seeking a disciplined and ambitious Sommelier to join our front-of-house team.
This is a unique hybrid role designed for a professional who possesses a deep foundational knowledge of wine and the technical finesse to manage a high-pressure restaurant section.
The Role
This position requires a dual focus: providing expert wine service and acting as a lead waiter for a dedicated section. You will be responsible for the end-to-end guest experience, ensuring that service standards remain flawless while driving wine engagement at the table.
Core Responsibilities:
- Section Management: Overseeing a station with professional poise, taking food and beverage orders, and managing service timing.
- Wine Service: Recommending pairings, performing professional decanting, and maintaining glassware standards.
- Sales Integration: Identifying opportunities to enhance the guest experience through informed wine suggestions.
- Cellar Support: Assisting the Head Sommelier with inventory management, bin organisation, and preparation for service.
Requirements
- Proven Floor Experience: Background in a high-end or fast-paced dining environment. You must be confident in running a section independently.
- Wine Proficiency: A strong understanding of international wine regions and service protocols. While WSET qualifications are preferred, we value practical knowledge and a sophisticated palate above all.
- Professionalism: Exceptional communication skills and the ability to maintain composure in a demanding Mayfair environment.
