We are looking for an experienced chef to join the grill section at a busy rooftop restaurant and bar in central London. The successful candidate will have proven experience working on a high-volume grill section, with particular confidence using a charcoal grill and cooking premium meat and fish to a consistently high standard. Key responsibilities • Run and maintain the grill section confidently during busy services., • Cook steaks, meat, fish and other grilled dishes accurately to the required temperatures and specifications., • Demonstrate excellent knowledge of meat cuts, cooking temperatures and resting techniques., • Manage charcoal, heat zones and grill temperatures effectively throughout service., • Maintain speed, organisation and consistency during high-volume services., • Complete daily mise en place and ensure the section is fully prepared before service., • Maintain high standards of food presentation, quality and portion control., • Follow all food safety, HACCP, allergen and hygiene procedures., • Minimise waste and support effective stock rotation and food-cost control., • Work closely with the Sous Chefs, Head Chef and wider kitchen team., • Keep the section clean, organised and professional at all times.
