Job Description About the Role: The Chef De Cuisine (Banquet Chef) will serve as the culinary leader responsible for overseeing all kitchen operations but focused mainly on Banquet and Catering execution to ensure the highest standards of food quality, presentation, and safety. This role reports to the Executive Chef and involves assistance in designing innovative banquet and catering menus that reflect both seasonal ingredients and the unique culinary vision of the establishment. The Chef De Cuisine will manage and mentor all kitchen staff, fostering a collaborative and efficient work environment that promotes professional growth. This position will also be responsible for collaborating with the Director of Sales and Catering on the culinary execution of banquet events. Minimum Qualifications: • Proven experience as a Chef De Cuisine, Banquet Chef, Head Sous Chef, or similar leadership role in a professional kitchen., • Formal culinary education or equivalent professional training in culinary arts., • Strong knowledge of food safety standards and kitchen sanitation practices., • Demonstrated ability to manage all kitchen staff and operations effectively., • Excellent organizational and time management skills., • Experience working in fine dining or high-volume ala carte hot line service environments., • Experience in 4-to-5-star Hotel Banquet and Catering operations., • Certification in food safety management (e.g., ServSafe or equivalent)., • Proficiency in banquet and catering menu design., • Strong leadership skills with a focus on team development and conflict resolution., • Familiarity with local, national, and international cuisine trends., • Able to execute banquets for up to 300 to 500 people., • Garde Manger experience; Capable to execute high-end cold food presentations., • Banquet display proficiency and Action Station set up., • Creating daily prep and production lists., • Supervise and coordinate daily kitchen activities, ensuring timely and high-quality food preparation and presentation., • Train, mentor, and evaluate all kitchen staff to maintain a motivated and skilled culinary team., • Manage inventory, order supplies, and control food costs to maximize profitability without compromising quality., • Ensure strict adherence to food safety, sanitation, and hygiene standards in compliance with local regulations., • Collaborate with management and front-of-house teams to optimize member and guest satisfaction and operational efficiency.
