An exciting opportunity has arisen for an experienced Sous chef, at Olivia´s La Cala a well-established, Luxury dining restaurant in La Cala de Mijas who pride themselves on delivering great, honest food served in a friendly, relaxed atmosphere. At least 3 years of experience in a similar role. This position will combine to help the head chefs responsibility of the kitchen with regards to planning, preparation, set up and execution of food items. This is a fast-paced and hard-working kitchen. Reporting to: Head Chef MAIN RESPONSIBILITIES · To help lead a disciplined, well harmonizing team. · That with creative ideas and suggestions, he/she contributes to a continuous improvement of the entire operation. · To be knowledgeable of local food hygiene procedures and national guidelines as per legally required. · That, with his/her friendly and courteous attitude, he/she supports and maintains the good reputation of the restaurant. · To ensure standard recipes are followed as directed by the Executive Chef in order to ensure consistency of all food. · To make sure that the restaurant’s guidelines, standards and procedures are followed. · To maintain good communication between restaurant and kitchen. · Strict following of closing and opening check lists, cleaning check lists, stock control, procurement, deliveries, storage and food cost management. · Performs special duties and projects as assigned by the Directors and Executive Chef. · Actively display high level of knowledge of all food and beverage menu items and current promotions. ---------------------------------------------------------------------------------------- Una gran oportunidad ha surgido para un experimentado Sous chef, en Olivia's La Cala un bien establecido, restaurante de lujo en La Cala de Mijas que se enorgullecen de ofrecer una gran comida, honesto servido en un ambiente agradable y relajado. En dependencia de: Jefe de Cocina PRINCIPALES RESPONSABILIDADES - Ayudar a dirigir un equipo disciplinado y bien armonizado. - Contribuir a la mejora continua de toda la operación con ideas y sugerencias creativas. - Que conozca los procedimientos locales de higiene alimentaria y las directrices nacionales de acuerdo con la legislación vigente. - Que, con su actitud amable y cortés, apoye y mantenga la buena reputación del restaurante. - Garantizar que se siguen las recetas estándar indicadas por el Chef Ejecutivo para asegurar la consistencia de todos los alimentos. - Asegurarse de que se siguen las directrices, normas y procedimientos del restaurante. - Mantener una buena comunicación entre el restaurante y la cocina. - Seguir estrictamente las listas de comprobación de cierre y apertura, las listas de comprobación de limpieza, el control de existencias, las compras, las entregas, el almacenamiento y la gestión de los costes de los alimentos. - Realizar tareas y proyectos especiales asignados por los Directores y el Chef Ejecutivo. - Mostrar activamente un alto nivel de conocimiento de todos los elementos del menú de alimentos y bebidas y de las promociones actuales.
