La Maison Ani is a celebration of love and food a stone's throw from Sloane Street and situated in Jumeirah Carlton Tower, bringing the timeless allure of France to Knightsbridge, London. The sommelier is responsible the wine service in the restaurant whilst providing a professional, efficient and accurate service of the wine in order to completely exceed guests' expectations during the dinner experience. Working closely with the head sommelier and the commis sommelier in order to ensure a smooth service at all times. The sommelier is focused at all times to be an excellent and confident communicator with guests, colleagues, and management. The sommelier's main focus is to provide detailed technical wine knowledge of specific vintages, prodcuers and regions to the guest in order to assist with the choice of bottle. Advise on wine and food paining is another focus. A major part of the sommeliers dutics is the wine service for guests by topping up glasses, anticipating an upsell proposing a second bottle once the first has finished; all with the assistance of the commis sommelier. Out of the hours of service it is important to monitor wine inventory, update the wine list, conduct staff trainings on wine service and knowledge. The main focus use planning and organizational skills in the cellar in order to optimise space available

SERVICE R E S P O N S I B I L I T I E S - Assist the hostess/ host to seat the customers - Great the guests and take the drinks order - Place the drinks order - Serve the drinks, explain the menu and specials if any - Let the Headwaiter know if any requirement or specifics mentioned by the table before he takes the order - Once the order taken check the mise en place needed and place it on the table using the service plate - Assist the headwaiter to serve the food when it arrives - Before clearing a table always check that it has been called away on Micros - Once the mains courses are finished clear the table, crumb and refresh the table cloth using the Rotolino method - Bring the dessert menus and announce the specials if any - Take the desserts and coffee order and place it on Micros (always ask the guest if they’d like the coffees with or after desserts) - Once the desserts are finished clear them - When the guests ask for the bill always double check with the headwaiter and sommelier in case the wine check and bill check hasn’t been done before dropping it on the table

R E S P O N S I B I L I T I E S o To supply the highest level of customer care and service whether in the public eye or in the back areas. o Prepare, cook, and serve any food delegated as your responsibility ensuring that the highest possible quality is maintained and that agreed standards for food preparation and presentation are met at all times. o To adhere to company procedures in regards to temperature checks, food labeling and dating, cleaning schedules, and hygiene regulations at all times and ensure that all records of such are updated and kept. o To assist with the acceptance and storage of deliveries and that all relevant company procedures are adhered to. o Ensure and maintain the work area clean, hygienic, and tidy state at all times. o To wear the full and correct uniform at all times whether in the public eye or back areas. o To have an understanding of menu planning, writing, and the implementation of stock controls and how this enables the kitchen to meet Gross Profit %. o To be familiar with the opening and closing procedures of the kitchen and carry them out as rotated. o To assist and ensure the junior chefs carry out daily and weekly procedures including temperature checks, food labeling/dating, and storage and to ensure records of such are up to date. o Ensure that temperature checks are carried out a minimum of 5 times per day and recorded. o To recognize the importance of good stock management/control and its importance in the kitchen meeting its Gross Profit %. o To remove any hazards and make safe any defects in the kitchen or equipment and report any problems to the Senior Chef on duty.

R E S P O N S I B I L I T I E S o Organize together with the Chef de Partie shifting in the section with regard to mise en place production and its service. o Take orders from his/her Chef de Partie and carry them out in the correct manner. o Responsible for completing the daily checklist regarding mise-en-place and food storage. o Together with his/her Chef de Partie write daily wine, dry store, food requisitions, and kitchen transfers on the appropriate forms for the approval of the Head Chef/ Sous Chef in order to achieve the high stock rotation desired in his/her section. o Maintain good colleagues relations and motivate colleagues. o Work to the specifications received by the Chef de Partie regarding portion size, quantity, and quality as laid down in the recipe index. o Attend daily meetings with the Head Chef and other meetings as requested by the Head Chef/ Sous Chef. o Check the main information board regarding changes in any Banquets or other information regarding the organization. o Report any problems regarding the failure of machinery and small equipment to the Head Chef and follow up and ensure necessary work has been carried out. o Pass all information about to the next shift functions. o Take charge of the section during the absence of Chef De Partie o Comply with all Gaia standards and HACCP guidelines.
