•Maintain a high level of personal hygiene • Interested and knowledgeable in all Pizza-making process • Collaborate with colleagues on cutting, slicing and cooking all ingredients needed for all selection of pizza • Keep a good standard of hygiene in all section including all different pizza oven and machinery • Tidy storage in both walk in fridges to be maintain at all time with a good rotation of ingredients • Maintain Luci quality and standards following all par levels avoiding waste of dough and ingredients • Follow all the assignments received from Head pizzaiolo • Keeping all ovens always at right temperature to achieve the same quality of pizza • Check constantly the proof process of the dough, avoiding overproof and then wastages • Collaborate with FOH staff and kitchen’s chefs to manage a good service and a counter always filled with fresh baked pizza up to Luci standard
