
Key Responsibilities
Food & Menu
Design, develop, and update menus
Ensure consistent quality, taste, and presentation
Control portion sizes and reduce food waste
Adapt menus to seasonality and customer demand
Kitchen Management
Lead and motivate the kitchen team
Create staff rotas and manage labour costs
Train, mentor, and develop chefs and kitchen staff
Maintain discipline, cleanliness, and workflow
Cost & Stock Control
Manage food costs and GP margins
Order ingredients and manage suppliers
Monitor stock levels and minimise wastage
Conduct stock takes and costings
Health, Safety & Compliance
Ensure compliance with food hygiene and H&S regulations
Maintain kitchen cleanliness and organisation
Implement allergen controls and food safety procedures
Collaboration
Work closely with front-of-house and management
Handle customer feedback related to food
Support events, specials, and service planning
Skills & Qualities
Strong leadership and communication skills
Excellent cooking and plating ability
Organised, calm under pressure
Financial awareness (costing, margins, waste)
Passion for food and consistency
Typical Experience Required
Several years as a Sous Chef or Senior Chef
Proven experience managing a kitchen team
Food hygiene certification (Level 3 preferred)
