Our story Back in 2019 in Paris, two friends, Charles and Victor, opened a brasserie together - the kind of place Parisians disappear into for a 3-hour lunch. The role As a Bar Assistant Manager, you'll work closely with the Bar Manager to run the day-to-day bar operation at Brasserie Olivia. You'll lead and support the bar team during busy services, making sure drinks are prepared quickly, consistently and to the highest standard. You'll support the Bar Manager with rotas, ordering, stock and waste, while helping train and develop the team. Our bar sits at the heart of the restaurant, so you'll also be present with our guests, bringing energy, personality and great hospitality. What success looks like • You'll help run and organise a bar where drinks are prepared quickly and consistently, even during the busiest services., • You'll ensure the bar is fully prepared for service, with stock, equipment and mise en place ready before the first guests arrive., • You'll maintain excellent standards across cocktails and drinks, making sure everything is consistent and beautifully presented., • You'll support the Bar Manager with rotas, ordering, stock management and waste control, helping the bar run efficiently., • You'll coach, train and support bartenders, helping build a confident, knowledgeable and high-performing team., • You'll support recruitment by coordinating trial shifts and identifying candidates who will strengthen the team., • You'll create a great guest experience, interacting naturally with guests and bringing positive energy to the restaurant., • You'll work closely with the floor and kitchen teams to keep service running smoothly throughout every shift. What you'll bring • You're already working as a Bar Assistant Manager, or you're an experienced Senior Bartender ready for the next step., • You have strong experience working in a high-volume restaurant or bar environment., • You have excellent cocktail knowledge and are confident in preparing all the classics quickly and consistently., • You have experience with the operational side of running a bar, including staff rotas, ordering, stock management and waste control., • You're confident leading a team, giving feedback and helping bartenders develop, • You're quick on your feet, stay calm under pressure and know how to keep things moving during a busy service., • You're positive, presentable and comfortable interacting with guests and creating a great atmosphere., • Good wine knowledge would be a plus. Osteria Teatro is a new Italian bar and restaurant offering food, cocktails and private events. We are looking for an experienced, hands-on Assistant Manager to help lead the venue and support its continued growth. You will work closely with the owner and take responsibility for leading shifts independently, maintaining high standards and ensuring every service runs smoothly. You will be visible on the floor, support the bar and coordinate closely with the kitchen, while helping to create a welcoming experience that brings guests back. Responsibilities • Lead busy services while working actively on the floor and supporting the bar., • Open and close the venue, brief the team and ensure the restaurant is ready for service., • Take responsibility for guest experience, resolve issues professionally and build relationships with regulars., • Coordinate the floor, bar and kitchen to maintain an efficient service., • Support rotas, stock control, ordering, cash reconciliation and team training., • Maintain high standards of cleanliness, presentation and food and drink service., • Help convert enquiries into bookings and deliver well-organised private events., • Identify and implement practical ideas to improve bookings, repeat visits and sales., • Use quieter periods productively to train the team, improve the venue and follow up on opportunities. About you • Experience as an Assistant Manager, Duty Manager or strong Supervisor in a similar bar or restaurant., • A track record of leading shifts independently., • Confident table-service skills and a good understanding of bar operations., • A professional, reliable approach and the ability to lead by example., • Commercial awareness, including staffing costs, stock waste and the connection between service and sales., • Initiative, sound judgement and a willingness to take responsibility., • Availability to work evenings and weekends.
