•Maintain a high level of personal hygiene • Interested and knowledgeable in all Pizza-making process • Collaborate with colleagues on cutting, slicing and cooking all ingredients needed for all selection of pizza • Keep a good standard of hygiene in all section including all different pizza oven and machinery • Tidy storage in both walk in fridges to be maintain at all time with a good rotation of ingredients • Maintain Luci quality and standards following all par levels avoiding waste of dough and ingredients • Follow all the assignments received from Head pizzaiolo • Keeping all ovens always at right temperature to achieve the same quality of pizza • Check constantly the proof process of the dough, avoiding overproof and then wastages • Collaborate with FOH staff and kitchen’s chefs to manage a good service and a counter always filled with fresh baked pizza up to Luci standard
CONTRIBUTE TO THE PRODUCTION OF THE HIGHEST POSSIBLE FOOD QUALITY, AND COORDINATE STAFF IN THE DELEGATED SECTION EXPERIENCE FOR THIS POSITION IS REQUIRED • Prepares and properly garnishes all food orders as they are received in accordance with menu specifications, insuring proper plate presentation • Prepares all main kitchen dishes; controls the positioning and rotation of foods and ensures proper plate presentation • Sets up for lunch and dinner by ensuring proper amounts are in place for forecasted covers, special functions and all reservations • Adheres to Luce standards of food quality, preparation, recipes, and presentation • Supervises the proper set-up of each item on menus and insures their readiness • Works with the Chefs in the kitchen to ensure seasoning, portions, and appearance of food • Stores unused food properly • Ensures that food from all section is delivered on time • Follows proper safety, hygiene, and sanitation practices • To carry out any other duties as directed by your senior chef and the Head Chef. • Ensures readiness and makes priorities in case of last-minute changes to reservations • Maintains an exact record of preparation, cooking and presentation specifications of all dishes produced in the section in a file which is kept at the section at all times for reference • Confers closely with the Senior Chef de Partie and takes every opportunity to become familiar with all aspects of his or her position, in order to be ready to fill in whenever required • Co-ordinates job tasks with staff in own section • Helps employees to achieve optimum quality • Knows how to follow applicable laws regarding food safety and sanitation • To insure that the food cooked in the restaurant kitchen is the standard that the Head Chef has set
