Job Title: Fishmonger Location: Primrose Hill/marylebone London, Type: Full-time Role OverviewWe are seeking a skilled and passionate Fishmonger to join our team. You will be hand-preparing, and selling high-quality seafood. You will act as an expert guide for our customers, offering preparation and cooking advice, while ensuring all products meet the highest standards of freshness and food safety. Key ResponsibilitiesSeafood Preparation: Hand-prepare fish and shellfish, including scaling, gutting, filleting, boning, shucking, and dressing. Customer Service: Advise customers on species, seasonality, portion sizes, and preparation methods to drive sales. Stock & Inventory: Receive early-morning deliveries, assess quality, check temperatures, rotate stock, and manage display cabinets. Hygiene & Safety: Maintain impeccable health and safety standards, prevent cross-contamination, and sanitize work areas and tools. Sustainable Sourcing: Maintain knowledge of responsible fishing practices and help promote sustainable seafood options. Requirements Experience: Previous experience in fishmongery, seafood retail, or as a commercial fish preparer.Technical Skills: Advanced knife skills and the ability to process, weigh, and package seafood accurately.Product Knowledge: Deep understanding of various fish and shellfish species, their origins, and seasonality.Physical Requirements: Ability to work early morning shifts, stand for long periods, lift heavy items, and work in cold, wet conditions. Communication: Exceptional interpersonal skills with a strong command of spoken English to engage customers. Some Japanese speaking or sashimi experience a plus

Tanakatsu is an original Japanese Katsu restaurant based in Angel Islington and has been running for last 8 years. Currently we are recruiting roll as CDP who has a minimum of 2 years experience in similar position As a CDP you are expected to help chefs peeper and serve food (not necessary to have experience in Japanese cuisine) be able to comunícate to with rest of kitchen members and work closely with head chef/owner to keep up both good standards.
