Responsibilities: · Supervise and coordinate daily activities of all kitchen stewards and External Utility staff (If any). · Ensure all kitchen and service equipment (pots, pans, utensils, etc.) are properly cleaned, sanitized, and stored. · Maintain cleanliness of kitchen, dishwashing areas, waste disposal zones, and back of house corridors. · Implement and monitor cleaning schedules for all kitchen areas and equipment. · Support kitchen and Buffet operations by ensuring timely availability of clean and functional kitchen tools and equipment. · Enforce and monitor compliance with hygiene, sanitation, and safety standards (HACCP, Local Municipality regulations, etc.). · Conduct regular inspections of kitchen areas to ensure cleanliness and organization. · Coordinate pest control and waste management programs, as per Policy. · Ensure staff use PPE and follow safe working practices when handling cleaning agents and equipment. · Train, motivate, and discipline stewarding staff to ensure high performance and productivity. · Prepare and maintain duty rosters and attendance records. · Control inventory and usage of cleaning materials, Tools, and kitchen equipment. · Report maintenance issues and follow up on repairs with the Engineering department. · Assist in monthly stocktaking of stewarding supplies and kitchen equipment. · Work closely with the Executive Chef, Executive Sous Chef, to meet operational requirements. · Coordinate with Procurement and stores for replenishment of stewarding materials. · Support setup and breakdown of buffet lines, banquets, and large functions. Requirements: · Minimum 3–5 years of experience in stewarding, with at least 1–2 years in a supervisory or chief stewarding role. · Strong knowledge of hygiene and sanitation standards (HACCP). · Ability to manage a multicultural team effectively. · Strong organizational, leadership, and communication skills. · Basic computer literacy for reporting and inventory management. · Experience in hotels, resorts, or large-scale catering operations preferred. · Good interpersonal and communication skills · Fluent in both Spanish and English.
