La persona que esté al frente de nuestra cocina debe ser un profesional con experiencia en servicios de catering, colectivos y eventos, además de restaurante a la carta. Capacidad para gestionar el equipo de trabajo, la confección de la oferta de eventos y carta, y la implementación de ésta en la operativa del restaurante. Ofrecemos puesto fijo, en empresa consolidada con años de actividad en el sector. Se valorará vehículo propio y facilidad de traslado al puesto de trabajo. Funciones principales: · Elaboración de menús diarios para escuelas infantiles los cuales ya están determinados y avalados por una nutricionista infantil. Es posible que se modifiquen algunos menús en función de la temporada. · Propuesta y elaboración de los menús que ofrecemos a diario en nuestro obrador (previsión semanal). La oferta semanal es una oferta variada que comprende platos de carne, pescado y vegetarianos o veganos. En lo que refiere a los platos vegetarianos/veganos, la persona que ocupe el puesto deberá aprender a elaborar los platos que realiza nuestra Chef ejecutiva para saber transmitir la esencia que transmitimos actualmente. Estos menús se ofrecen tanto en tienda como en los caterings que desarrollemos (catering para rodajes o jornadas de trabajo). · Propuesta y elaboración de platos nuevos de carne, pescado, vegetarianos y veganos. Elaboración de escandallos de las nuevas elaboraciones. · Planificación, optimización de tiempos de producción y organización. · Gestión de stock, previsión de compras y materias primas: Revisar niveles de ingredientes. Realizar pedidos de materias primas. Controlar fechas de caducidad y rotación de producto. Verificar albaranes, recepción de mercancía y organización del género. · Cumplimiento de normativas de higiene (APPCC). Seguir los protocolos de manipulación de alimentos. Rellenar registros si corresponde (temperatura, trazabilidad, limpieza). · Limpieza y mantenimiento del puesto de trabajo. Mantener la zona de cocina limpia, ordenada y desinfectada antes, durante y después del turno. Condiciones: • Buscamos una persona dinámica y autónoma, de fácil adaptación al cambio y gestión de estrés., • Persona muy organizada para optimizar el almacenaje (somos un obrador muy pequeño). La organización y previsión son dos características cruciales para el puesto.
