  1. General Role
    The Kitchen Porter (KP) supports chefs and kitchen staff by maintaining cleanliness, organization, and hygiene in the kitchen.
    They ensure equipment, utensils, and work areas are clean and ready for use, helping the kitchen operate efficiently and safely.
  2. Core Duties
    A. Cleaning and Hygiene
  • Wash and sanitize dishes, utensils, pots, pans, and kitchen equipment using dishwashers and/or manual methods.
  • Clean kitchen surfaces, sinks, walls, floors, and storage areas throughout and at the end of shifts.
  • Empty and clean bins and waste containers regularly; separate recycling where required.
  • Follow cleaning schedules (daily, weekly, deep clean tasks).
  • Use approved cleaning chemicals safely and according to manufacturer instructions.
  • Ensure food safety and hygiene standards (HACCP) are maintained at all times.
    B. Equipment and Maintenance
  • Clean and maintain ovens, grills, fryers, and other kitchen appliances as directed.
  • Report any damaged or malfunctioning equipment to the Head Chef or Supervisor immediately.
  • Help set up and dismantle equipment for service or events.
    C. Support to Kitchen Operations
  • Assist chefs by collecting, washing, and returning equipment promptly.
  • Help with basic food preparation tasks (e.g., peeling vegetables, portioning ingredients) under supervision.
  • Refill and restock clean crockery, cutlery, and cooking utensils where needed.
  • Keep dry stores, walk-in fridges/freezers, and prep areas tidy and organized.
  • Move deliveries safely to storage areas; rotate stock using FIFO (First In, First Out).
    D. Waste Management
  • Separate and dispose of food waste, recyclables, and general waste correctly.
  • Follow site recycling and waste reduction procedures.
  • Maintain cleanliness around refuse areas to prevent pests.
  1. Health & Safety
  • Follow all Health and Safety, Food Hygiene, and COSHH (Control of Substances Hazardous to Health)regulations.
  • Wear correct personal protective equipment (PPE): gloves, non-slip shoes, apron, hair covering.
  • Be aware of fire exits, extinguishers, and emergency procedures.
  • Report any accidents, injuries, or hazards immediately to a supervisor.
  1. End-of-Shift Duties
  • Ensure all washing-up is completed and areas are clean and sanitized.
  • Check and clean drains, sinks, and filters.
  • Empty bins and replace liners.
  • Turn off and clean dishwashing machines.
  • Return all cleaning equipment to storage.
  • Prepare the kitchen for the next shift.
  1. Personal Conduct
  • Maintain a professional, positive attitude and cooperate with all team members.
  • Follow instructions from chefs and supervisors promptly.
  • Be punctual, reliable, and maintain good personal hygiene.
  • Communicate effectively and report issues proactively.
  1. Skills and Attributes
  • Strong work ethic and ability to work under pressure.
  • Attention to detail and commitment to cleanliness.
  • Good physical stamina (standing, lifting, carrying).
  • Teamwork and willingness to assist wherever needed.
  • Basic understanding of food hygiene and safety principles (training provided).
