Chef — Kūhaku 空白 205 Upper Street, Islington N1 · From £13 per hour + service charge · Salary options available Join our team at an independent Japanese izakaya and hidden cocktail bar on Upper Street. We serve a tight menu of Japanese small plates alongside our cocktails, and we're looking for a chef who can run our kitchen with care and consistency. The role You'll work independently in our compact kitchen, serving the counter attached to the kitchen as well as tables across the bar area. Full training on the menu is given, with time to get comfortable before you're running service on your own. Our kitchen is vegan-friendly by design — konbu dashi only, a vegan curry sauce, vegan panko and coatings, and separated fryers — so care around dietary requirements and allergens is a big part of the job. What you'll do • Cook and serve our Japanese izakaya menu accurately and consistently, after training, • Work independently to serve the kitchen counter and bar-area tables, • Complete all prep and mise en place needed to keep the full menu available, • Keep the kitchen clean, safe and hygienic — cleaning schedules, oil changes, proper opens and close-downs, • Handle allergens and dietary requirements with care, • Rotate stock, follow FIFO and flag what needs ordering, • Prepare staff food, • Contribute ideas and take part in tastings as the menu develops What we're looking for • Kitchen experience — Japanese or Asian cuisine is a plus, but not essential, • Confident working on your own and staying calm during a busy service, • Clean, organised and strong on food hygiene, • Food Hygiene Level 2 (or willing to get it), • Available evenings and weekends Hours We're open Tuesday to Sunday, evenings only. Closed Mondays.
