Knowledge of seasonal British ingredients is a must and being able to marry them with Indian spices and flavours. High professional standards are required across the board, including managing the kitchen team well and maintaining hygiene standards to a high level. Further, the Chef must have a clear sense of direction on menu formulation, its profit-making viability, be able to adjust to the needs of the business and have easy communication skills along with being able to keep abreast of ever-evolving trends in dining and restaurants.
