Key Responsibilities: Lead the kitchen team in a fast-paced, high-pressure environment. Ensure consistent preparation and presentation of dishes to meet our quality standards. Oversee the kitchen’s day-to-day operations, including stock management, ordering, and scheduling. Maintain strict adherence to food safety, hygiene, and health & safety procedures. Encourage teamwork and foster a positive, collaborative atmosphere in the kitchen. Develop new menu items and collaborate with management on seasonal updates. Qualifications: Proven experience as a Head Chef or Senior Chef in a busy restaurant environment, ideally Italian cuisine. Strong leadership and communication skills with the ability to manage a diverse kitchen team. Ability to work efficiently under pressure, keeping a calm demeanor in busy service times. Job Summary: The role of the Commis Chef at Secret Smokehouse is to work directly in the production team, including supporting chef tasks, always maintaining high hygiene standards in the creation of ready to eat products. The role requires the employee to work well as a team, sometime under pressure and be able to deal with the artisan quantities of smoked fish that Secret Smokehouse produces here in East London. The Commis Chef is a really key role within the smokehouse and so the employee will need to have a fantastic work ethic but also someone who wants to be part of a fun and exciting team and arguably the best smokehouse in the UK supplying the top tier chefs and restaurants. Roles and responsibilities: • Production tasks: curing, smoking, pin-boning, slicing and packing of smoked fish. • Preparation and packaging of ready-to-eat products such as patés, fish cakes and fish pies. • Report all Quality Control, Health & Safety and Food Safety concerns or areas for improvement. • Completing production and traceability records • Working with Production Assistants & Kitchen Porters to keep the Smokehouse to EC standards and above (e.g. SALSA requirements) • Stock rotation and labelling to ensure compliant storage of raw ingredients Sound like a job you can do, then get in touch today because we would love to hear from you and have you part of this great team.
