As a Cook / Taquero, you'll play a crucial role in ensuring the consistent quality and timely preparation of our menu items. You'll work in a fast-paced environment, collaborating closely with the kitchen team to meet customer demands and uphold our standards of food excellence.


Your responsibilities will include:


Trompo:
● Assemble and prepare trompos according to established recipes and standards.
● Marinate and season meats, ensuring they are well-flavored and tender.
● Skewer and arrange meat on the trompo, ensuring even distribution for proper cooking.
● Operate and maintain trompo cooking equipment, ensuring it is clean and functioning properly.
● Monitor cooking times and temperatures to ensure meat is cooked to the appropriate doneness.
● Slice cooked meat from the trompo and prepare it for serving in tacos.
● Follow all food safety and sanitation guidelines to ensure a safe and healthy work environment.


Grill:
● Prepare and cook food items on the grill according to established recipes and standards.
● Ensure all food is cooked to the appropriate temperature and consistency.
● Maintain a clean and organized work area, including the grill, prep areas, and storage areas.
● Follow all food safety and sanitation guidelines to ensure a safe and healthy work environment.
● Monitor food inventory and notify management of any shortages or issues.
Taquero:
● Greet customers with "Bienvenidos" and a smile. Take pride in serving guests and providing exceptional customer service.
● Prepare menu items according to established recipes and specifications, ensuring adherence to quality standards and food safety regulations.
● Work with speed and accuracy to meet customer orders promptly while maintaining product freshness and consistency.
● Conduct regular inspections of ingredients and finished products to uphold quality standards, promptly addressing any discrepancies or issues.
● Ensure all food and other items are stored correctly.
● Collaborate closely with other kitchen staff, including cashiers, prep, Tortillero(as) and managers, to ensure seamless coordination and teamwork.
● Follow standard operating procedures for food preparation, cooking, and sanitation, ensuring compliance with health and safety regulations at all times.
● Be willing to assist in other kitchen duties as needed, such as inventory management, dishwashing, and cleaning.
● Complete other tasks assigned by the Manager on Duty..
● Set up workstations with all necessary ingredients and kitchen equipment.
● Ensure excellent presentation before serving our products.
● Monitor products to ensure they do not run out during peak hours and that the grill is not overstocked during downtime.
● Follow recipes, including measuring, weighing, and mixing ingredients.
● Execute opening and closing procedures.
● Set up workstations with necessary ingredients and equipment, clean and disinfect work areas, equipment, and utensils.


Requirements:
● Bilingual (English / Spanish) basic to intermediate level preferred
● Excellent customer service skills and great attitude
● Previous experience in a similar role, preferably in a fast-paced restaurant environment.
● Must be able to work a flexible schedule including nights, weekends, and holidays as needed.
● Able to work in a high-stress, fast-paced environment
● Ability to lift up to 50 pounds
● Ability to multitask and prioritize tasks.
● Ability to follow all sanitation procedures.
● Ability to stand in one place for hours at a time and handle extreme heat.
● Ability to work efficiently under pressure and maintain composure during busy periods.
● Ability to work in a team.
● Strong communication and teamwork skills.


Qualifications:
● Excellent communication skills.
● Experience as a cook.
● Knowledge of food safety procedures and sanitation practices, including safe temperatures at which ingredients should be stored and food should be prepared to prevent foodborne illnesses.
● Proficiency in basic cooking techniques and food preparation methods.
