Roll Boys is a London-based cinnamon roll bakery built on brand, storytelling and a genuinely great product. We're growing fast, and the kitchen needs someone who can own it. We're looking for a Senior Baker to run day-to-day production, hold the line on quality and consistency, and lead the team bakers on the floor. This is a hands-on role. You'll be the person the batch, the provers, and the ovens answer to. You'll work closely with our Operations Director on systems and compliance, Our GM to make sure standards are being met across the team and with our baking consultant on recipe and process development, but the execution is yours. Who you are • An early riser who's genuinely fine with bakery hours this isn't a 9-to-5, • Calm under pressure; a bad batch or a busy morning doesn't rattle you, • Takes ownership without being asked - if something's off, you fix it or you say so, • Leads by example, not just by giving instructions, • Holds a high standard and doesn't let it slip when things get busy, • Comfortable in a small, fast-moving business where the processes aren't all written down yet, • Direct and honest - tells us when something isn't working rather than letting it slide, • Takes pride in the product and wants to be part of building something, not just running a shift Job Requirements • Run daily production end to end - prep, proving, baking, finishing to hit volume targets consistently, • Own dough consistency: manage prover conditions, and batch timing so quality doesn't vary day to day, • Lead, train and rota the team bakers; set the standard on the floor and hold people to it, • Own food safety and hygiene compliance in the kitchen — records, checks, the lot, • Troubleshoot production issues as they come up (equipment, ingredients, timing) and flag what needs fixing beyond your control, • Work with our baking consultant on recipe development and process improvements, and help translate that R&D into repeatable daily practice, • Manage stock and ingredient ordering for production, • Protect the product quality bar that the Roll Boys brand is built on What you'll need • Proven experience as a Baker/Pastry Chef, in a high-volume bakery, patisserie or kitchen, • Strong hands-on experience with enriched doughs - you understand fermentation, proving and how temperature and time affect the result, • Comfortable running a section solo under pressure and hitting volume without cutting corners, • Experience leading, training or mentoring other bakers, • A current food hygiene certificate (or willing to get one immediately), • A problem-solver - when a batch goes wrong, you diagnose it and fix it, not just flag it, • Genuinely cares about product quality, team and consistency
