Job Summary: - Process lamb and other meat products according to industry standards and customer specifications. - Maintain the quality and reputation of West Scottish Lamb’s premium products. - Ensure adherence to hygiene, food safety, and workplace safety regulations. Key Responsibilities: - Perform slaughterhouse duties, including cutting, trimming, and processing lamb carcasses. - Break down whole carcasses into primal, sub-primal, and retail cuts. - Debone, portion, and prepare meat for wholesale, retail, or further processing. - Inspect meat for quality, freshness, and adherence to food safety guidelines. - Maintain consistency in cutting techniques and product presentation. - Sanitise equipment, knives, and work areas according to company policies. - Ensure compliance with Food Standards Agency (FSA) regulations and workplace safety procedures. - Monitor and manage meat inventory, rotating stock to avoid spoilage. - Assist with ordering and maintain efficient stock levels. - Minimise waste through efficient use of products. - Collaborate with butchers, staff, and management to ensure smooth production. - Report equipment malfunctions or quality concerns to the slaughterhouse manager. Skills & Qualifications: - Prior experience as a butcher, preferably in lamb or red meat processing. - Experience in a slaughterhouse or meat processing facility is advantageous. - Excellent knife handling and meat cutting skills. Knowledge of butchery techniques for lamb (deboning, portioning, trimming). - Strong understanding of meat safety and hygiene practices. - Ability to work in cold environments and lift heavy items (up to 50 lbs). - Comfortable handling raw meat products and working with sharp tools in a fast-paced environment. Education & Certifications: - High school diploma or equivalent preferred. - Certification in food safety and hygiene (HACCP) is beneficial. - Training in proper slaughter techniques and animal handling is a plus.
