The Oren, a bespoke private residence for independent later living in the heart of Hampstead, is looking for a dynamic Food & Beverage Manager, responsible for the entire Food & Beverage operation including training of service staff, the organization and cleanliness throughout the entire food service and kitchen operation. Provides high service standards that assures residents, guests, and family members satisfaction including in-apartment dining and special events. Meets all company policies and procedures. Maintains all department expenses with-in the budgeted guidelines based on census in accordance with all company standards and operating procedures. Promotes resident satisfaction through understanding their preferences. Trains and develops staff for growth and opportunity to meet the demand of qualified employees needed for continued company success. Essential Job Functions Service Provision: Trains, directs and schedules food and beverage staff. Responsible for maintaining labor hours as determined by budget. Provide written and verbal performance evaluations/Reviews Set objectives and accomplish them in a timely manner. Supervises and practices, meet, seat, & greet protocol while using resident and guest names whenever possible. Supervises all aspects of Food & Beverage operations including mis-en-place, service, cleanliness, opening/closing procedures, customer service, quality and standards. Hands on operator. Communicates clearly with kitchen staff to meet resident requests and exceptional service standards. Teaches and promotes the philosophy of the dining services promise. Recognizes performance issues and provides corrective solutions. Maintains china, glass, linen, and small wares inventory. Attends weekly department head meetings. Conducts weekly inspections of the food & beverage areas to ensure the property and FF&E are kept in the best condition, and recommends preventive maintenance to the General Manager where needed Randomly inspects all food & beverage areas daily to ensure facilities and equipment are clean, well maintained and replaced if necessary Checks the food & beverage outlets reservation lists, arrival list, events guest list, and VIP list to ensure that own staff is aware of VIP guests and service volumes Monitors food & beverage sales regarding discounts Audits food & beverage services and quality on a regular basis and develops and implements strategies to improve results Plans and co-ordinates in-house activities and package plans with Head Chef, Sales, Wellness Manager and FOH Manager Approves all wine purchasing, and other food & beverage items in accordance with corporate quality standards With Head Chef, maintains Apicabse ensuring all data is updated for all food and beverage items to include but not limited to: The ingredients used are in Apicbase with correct stock item packages and prices. The recipes in Apicbase have correct ingredients, quantities, and portioning. Orders are being sent and received in Apicbase. Your inventory is counted regularly (preferably monthly). Other inventory actions (create, waste, transfer) are registered in Apicbase. The Cubigo PoS is linked to Apicbase and recipes are linked to the right PLUs on Cubigo PoS. MISCELLANEOUS Attends meetings and training required by the General Manager Assists colleagues to perform similar or related jobs when necessary Ensures guest satisfaction by attending to their requests and inquires courteously and efficiently Accepts flexible work schedule necessary for uninterrupted service to all guests Maintains own working area, materials and company property clean, tidy and in good shape; reports defective materials and equipment to appropriate individual Continuously seeks to endeavor and improve the departments efficient operation, and knowledge of own job function Is well updated on, and possesses solid knowledge of the following: - Community fire, bomb and emergency procedures - Community and safety policies and procedures - Community facilities and nearby sights of interest and importance (i.e. hospitals, stations, tourist sights) - Community standards of operation and departmental procedures - Current licensing relating to own department and property - Accepted methods of payment by the community - Corporate clients and clients generating high business volume HEALTH AND SAFETY Ensures that all potential and real hazards are reported and reduced immediately Fully understands the company fire, emergency, and bomb procedures Ensures that emergency procedures are practiced and enforced to provide for the security and safety of guests and employees Ensures that employees work in a safe manner that does not harm or injure self or others Stimulates and encourages a general awareness of health and safety in tasks and activities carried out within the division Ensures the safety of the people and property within the premises by applying company regulations, adhering to existing laws and regulations Anticipates possible and probable hazards and conditions and either corrects them or takes action to prevent them from happening Ensures that the highest standards of personal hygiene, dress, uniform, appearance, body language and conduct of hotel employees is maintained by all employees in the department Strictly enforces all company policies and procedures. HUMAN RESOURCES MANAGEMENT Screens, interviews and selects potential staff for department Carrys out the selection process Develops and recommends appropriate training to meet guest needs Checks that staff meets and exceeds guest expectations by training and encouraging staff to provide exceptional service Identifies training needs, and makes sure staff receives training, including skills training to provide consistent, reliable service Identifies employees with potential for promotion and/or transfer and makes appropriate development plans for him or her together with the General Manager Conducts and guides all staff, and works closely with the General/Hr Manager on the following Human Resources related tasks: - Performance appraisals - Coaching - Discipline and grievance - Employee relations - Wage and salary administration - Compensation and benefits - Succession planning Customer Service: Understands residents needs and preferences. Instills proper service techniques and trains staff on finer service points according to the Restaurant Training Guidelines. Knowledgeable in use of POS system. Understands and adapts to the needs of service sequence. Holds monthly training sessions on service standards, food safety and sanitation, and customer service. Posts and maintains opening/closing procedures and daily side-work duties list. Maintains a professional and positive attitude with other departments and their staffs. Maintains department standards at all time. Knowledge, Skills, and Abilities Communicates with 1) persons who are aging or who might have dementia, 2) residents family members, 3) co-workers, and 4) supervisors in a courteous and professional manner.
