Descripción del puesto El rol del Jr. Sous Chef es garantizar que se mantengan los más altos estándares de alimentos y bebidas en todo momento. Además, es responsable de completar todos los procedimientos relevantes del departamento de Cocina según lo indique la empresa y de gestionar la cultura laboral para apoyar los valores de Miiro. Responsabilidades clave • Dirigir al equipo de cocina en ausencia del Chef ejecutivo y el Sr. Sous Chef, incluyendo Chef de Partie, Demi Chefs y Kitchen Porters. • Apoyar al Chef Ejecutivo y al Sr. Sous Chef con mentoría, coaching y retroalimentación para mejorar el rendimiento y gestionar conflictos del equipo. • Asumir responsabilidades administrativas en ausencia del sous chef senior, como facturas, control de costos y el libro de alimentos. • Fomentar la comunicación diaria con otros departamentos para promover trabajo en equipo y servicio de calidad. • Supervisar la ejecución de los platos y los procedimientos de salud, seguridad y control de temperaturas en la cocina. • Colaborar en la creación de platos especiales y en la modificación de menús. • Informar al jefe de cualquier dificultad, comentario de huéspedes o problemas internos. • Ser responsable de todas las operaciones de cocina en ausencia del Chef Ejecutivo y el Sous Chef. • Cumplir con las reglas y regulaciones del hotel y el Manual de Miiro. • Participar activamente en programas de capacitación y maximizar las oportunidades de auto-desarrollo.
