Job Description EXECUTIVE PASTRY SOUS CHEF | $125K-$150K + BONUS Premium NYC Specialty Food Market | Bronx Commissary The Operation: 90+ year NYC food landmark needs an Executive Pastry Sous Chef for our Bronx commissary. You'll lead daily pastry production, supplying multiple retail locations across the tri-state area. This is high-volume production work, not restaurant plating. What You'll Do: • Manage daily commissary pastry production from our 350-person Hunts Point distribution center, • Lead pastry team through laminated doughs, viennoiserie, cakes, and seasonal items, • Work with the Culinary Director on menu development and quality standards, • Manage labor schedules and food costs to meet budget targets, • 5+ years high-volume pastry experience (production bakery, large hotel pastry shop, or commissary), • 3+ years managing pastry teams, • Experience producing 1,000+ pastry units daily, • Understanding of commissary consistency vs restaurant creativity, • Culinary or pastry education, • ServSafe certified, • Early morning starts (6 am), • 5 days/week with occasional weekends, • More predictable schedule than restaurants $125,000-$150,000 + discretionary bonus + full benefits (medical/dental/vision, 401k, life insurance, commuter benefits)
