Job Description Restaurant General Manager Location: Fishkill, NY Reports To: Ownership Position Overview An established, independently owned full-service restaurant in Fishkill, NY is seeking a highly capable Restaurant General Manager to lead all aspects of the operation. This role is designed for a self-directed hospitality professional who thrives in an independent environment and is comfortable making decisions, refining systems, and driving both operational and financial performance. The General Manager will oversee the entire restaurant operation including front-of-house leadership, kitchen coordination, menu development, vendor management, financial performance, and team development. This individual will operate with significant autonomy and is expected to bring strong operational discipline, business acumen, and a hands-on leadership style. This role requires someone who understands how to run a restaurant as a business—balancing guest experience, team leadership, cost management, and operational execution. Key Responsibilities Operational Leadership • Oversee all daily front-of-house and back-of-house operations., • Maintain high standards for hospitality, food quality, cleanliness, and service execution., • Develop, implement, and continuously refine operational procedures and service standards., • Maintain strong floor presence and lead by example during peak service periods., • Ensure compliance with all health, safety, labor, and licensing regulations. Menu Development & Culinary Collaboration • Lead menu development, menu updates, and seasonal menu planning in collaboration with the kitchen team and ownership., • Oversee recipe development, standardization, and documentation to ensure consistency and quality., • Implement menu engineering strategies to balance guest appeal with profitability., • Evaluate menu performance through sales mix analysis and contribution margins., • Develop specials and promotions that align with both brand identity and financial goals. Financial & Business Performance • Maintain full P&L responsibility for the restaurant., • Manage labor, food cost, beverage cost, and controllable expenses to meet financial targets., • Conduct regular analysis of sales reports and operational KPIs., • Implement recipe costing and menu pricing strategies to support profitability., • Forecast business levels and adjust labor and purchasing strategies accordingly. Vendor & Inventory Management • Establish and manage relationships with food, beverage, and operational vendors., • Negotiate pricing and evaluate vendor performance to maintain strong cost control., • Oversee purchasing, inventory management, and invoice reconciliation., • Identify alternative vendors or products when appropriate to improve cost structure or product quality. Systems & Technology Oversight • Evaluate operational systems and identify opportunities for improvement., • Implement and manage operational technology including POS systems, scheduling software, and inventory tools., • Lead implementation of approved technology upgrades in partnership with ownership., • Utilize operational reporting and analytics to drive business decisions. Team Leadership & Development • Recruit, hire, train, and develop both management and hourly team members., • Establish training systems to ensure consistent execution of service and culinary standards., • Provide hands-on leadership, coaching, and performance management., • Build a positive and accountable culture focused on teamwork and guest satisfaction., • Maintain staffing levels aligned with sales volume and operational needs. Guest Experience & Reputation Management • Ensure consistent delivery of exceptional hospitality and guest satisfaction., • Address guest concerns quickly and professionally., • Monitor online reputation and guest feedback., • Implement initiatives that strengthen guest loyalty and repeat business. Ideal Candidate Profile • 8–10+ years of progressive restaurant leadership experience., • Prior General Manager or multi-department leadership experience in a full-service restaurant., • Strong understanding of P&L management, food cost control, and labor management., • Experience with menu development, recipe development, and menu engineering., • Comfortable working in an independent restaurant environment with limited corporate structure., • Strong leadership presence with a hands-on operational style., • Comfortable making decisions, solving problems, and improving systems.
