Job Summary:
Mansion Thai Ltd is seeking a highly skilled
Hot Food Chef with expertise in Japanese cuisine to join our takeaway-focused team. You will be responsible for preparing fresh sushi and hot Japanese dishes while maintaining the high standards of quality, flavor, and speed that our customers expect. The ideal candidate must excel in a fast-paced kitchen, have an eye for detail, and contribute to menu innovation with an understanding of traditional Japanese flavors and techniques.

Key Responsibilities:
  • Prepare and cook a variety of hot Japanese takeaway dishes, such as ramen, donburi, teriyaki, tempura, and yakitori, along with fresh sushi preparation when needed.
  • Develop a seasonal takeaway menu, ensuring the highest quality of ingredients and presentation.
  • Master and execute traditional Japanese cooking techniques, including grilling, frying, and precise knife work, to ensure consistency in every dish.
  • Source and manage premium Japanese ingredients, working with suppliers to maintain freshness and authenticity.
  • Manage kitchen operations in a fast-paced takeaway environment, ensuring that food is prepared quickly and efficiently without compromising on quality.
  • Maintain strict hygiene and food safety standards, adhering to local regulations.
  • Collaborate with kitchen staff to ensure smooth operations and timely service during peak hours.
  • Innovate and introduce specials or fusion dishes to keep the menu dynamic and appealing to a diverse customer base.

Qualifications:
  • Minimum 5 years of experience in a Japanese or Asian cuisine setting, particularly in a high-volume takeaway environment.
  • Expertise in Japanese hot food preparation and sushi-making skills, with attention to detail in flavor balance and presentation.
  • Strong knowledge of Japanese cooking techniques such as frying, grilling, and precision knife work.
  • Experience in fast-paced kitchen operations, with the ability to maintain efficiency during high-demand periods.
  • Familiarity with sourcing authentic Japanese ingredients and maintaining high standards of freshness.
  • Excellent ability to create seasonal menus and specials that align with current food trends.
  • Experience in both Thai and Japanese cuisine will be considered an advantage, bringing a unique perspective on flavor integration.
  • Thai language skills are a plus, especially for communication within a diverse team or working with Thai suppliers
