ROLE PURPOSE The Sushi Chef is responsible for preparing and presenting sushi and other raw Japanese dishes to the highest standards of quality and hygiene. Working as part of the integrated kitchen, the role requires technical skill, consistency, and collaboration with the wider team to deliver a seamless guest experience. You will be a visible presence in the kitchen, calm under pressure, generous with knowledge, and deeply committed to quality, consistency, and culture. KEY RESPONSIBILITIES Responsibilities may include, but are not limited to: Sushi Preparation & Cooking Prepare and assemble sushi, sashimi, rolls, and other raw dishes according to Mitsus recipes and presentation standards. Ensure ingredients are fresh, properly stored, and handled safely. Maintain consistency in portioning, taste, and presentation. Assist with integrated kitchen duties, including supporting other sections when required, to ensure smooth service. Section Support & Teamwork Work closely with the Head Chef, Sous Chef, and other kitchen staff to coordinate service. Support junior staff in learning sushi preparation techniques under guidance. Communicate effectively to ensure timely delivery of dishes during service. Quality, Safety & Standards Maintain high standards of hygiene, cleanliness, and food safety. Monitor ingredient quality and ensure proper stock rotation. Adhere to Mitsus zero-waste philosophy and efficient use of ingredients. Development & Learning Continuously improve technical skills, knife work, and knowledge of Japanese cuisine. Contribute ideas for menu development and seasonal sushi offerings. Participate in training, briefings, and team meetings to support a collaborative kitchen environment. Required Skills & Qualifications: Previous experience as a Sushi Chef or similar role in Japanese cuisine. Strong technical skills in sushi preparation, knife handling, and ingredient knowledge. Understanding of food hygiene, safety, and kitchen operations. Ability to work in a fast-paced, high-volume environment. Team player with good communication and organizational skills.
