At Brucan Bakery, we are looking for a passionate Senior Baker/Pastry Chef to join our craft-focused team. We opened Brucan one year ago with a clear ethos: to bake artisanal goods that feel seasonal, creative and a little bit different. We change our menu regularly, introduce monthly specials, and are always looking for ways to push the quality and creativity of what we do. This is a great opportunity for someone with strong bakery or pastry experience who wants to take real ownership within a growing independent bakery. The Role This is a hands-on senior role where quality, consistency and organisation are key. You will help lead production across our pastry, enriched dough and savoury ranges, making sure every item that reaches the counter reflects Brucans standards. This is a fantastic opportunity to join a team with a lot of potential and room for growth. Pay: Up to 35k a year Hours: up to 40 hrs p/w Schedule: 5 days a week - Weekend availability is essential. Starts: Early starts will be required What Youll Be Doing Viennoiserie and enriched doughs Laminating, shaping and baking our range of croissants, danishes, brioche and enriched dough products. Menu development Contributing ideas for new products, seasonal bakes, weekend specials and monthly menu changes. Seasonal bakes and specials Supporting the creation and delivery of monthly menu changes, weekend specials and seasonal products. Savoury preparation Preparing high-quality sandwiches and savoury items using fresh, seasonal ingredients with care and attention to detail. Quality and consistency Ensuring every bake meets Brucans flavour, texture and visual standards. Ordering and stock management Helping order ingredients, manage stock levels and reduce waste. Recipe documentation Supporting the documentation and organisation of recipes so that our production is clear, consistent and scalable. Allergen documentation Helping maintain accurate allergen information across products and recipes. Station management Keeping your workspace clean, organised and efficient during busy production hours. Communication Communicating clearly with the Head Baker, owners and wider team to keep production running smoothly. All hands on deck As a small business, we sometimes need help in other areas. This may include supporting front of house, washing up or helping the wider team during busy periods. What Were Looking For Experience At least 3 years of professional experience in a bakery, pastry or similar food production environment. Technical skill Confidence working with viennoiserie, enriched doughs, pastry and savoury preparation. Creativity Someone who enjoys thinking about flavour, seasonality and how to develop products that feel exciting, thoughtful and true to Brucan. Organisation Someone who can manage prep lists, stock, recipes and production tasks with care and consistency. Communication Clear, calm and reliable communication with the team. Reliability You are comfortable with early starts and understand the rhythm of a working bakery. Attitude Someone who is willing to keep learning, take ownership and grow with the business. There is always more to learn in this profession, and we would love someone who wants to develop with us.
