Job Description Executive Sous Chef | Bronx Production Facility $130,000-$150,000 + Full Benefits | 90+ Year NYC Specialty Food Retailer Lead commissary operations producing 3,000-5,000+ portions daily for 6-8 premium retail locations across the tri-state area. The Role: • Oversee 190-person commissary operation across multiple shifts, • Manage sous chefs who lead production teams, • Partner with Executive Chef/Culinary Director on menu development and quality standards, • Control labor costs, inventory, purchasing, and department P&L, • Ensure consistency across all retail locations, • 5+ years managing large-scale commissary or production operations (150+ employees OR 5+ sous chefs/managers reporting to you), • 3+ years in senior leadership (Executive Sous Chef, Kitchen Manager, or Commissary Manager level), • Experience managing through multiple layers (sous chefs who manage line cooks), • Multi-shift coordination experience (3-shift or 24/7 operations), • Examples of relevant backgrounds: Commissary operations producing 2,000+ portions/day, airline catering production, large institutional kitchens (500+ meals/day), production facilities supplying multiple locations, • Strong P&L management, vendor negotiations, cost control, • The largest operation was under 75 people, • You've only managed single-shift operations, • You've only worked in restaurants or hotels (even high-volume, multi-outlet), • You've never produced food for retail distribution or multiple off-site locations, • Commissary schedule (structured leadership hours, not line cook shifts), • Manage operations at scale (190 people, multiple locations), • Growth path to Executive Chef/Culinary Director Apply: Email resume.
