Restaurant General Manager Dos Amigos · Ithaca, NY · Full-time, on-site $75,000 base. Up to $83,000 with performance bonuses. Plus a path to partial ownership. We started as a food truck. Our founder was a junior at Cornell's hotel school when we opened it. Burritos, tacos, quesadillas. One simple idea done well. The philosophy then was the same one we run on now: do less, and do it better. That truck did well enough that we came back to Ithaca in 2019 and built the brick and mortar version, this time with the cocktail program we'd always wanted. We're independently owned, profitable, and planning to grow. We're hiring the person who runs it. Read this part carefully. We've written training manuals and skills progressions for several roles. Development plans exist for parts of the team. Other pieces are half built. Some don't exist yet. You'd be stepping into systems that are actively under construction. Using them, finding where they break, and building what comes next. If you need everything defined before you can operate, this job will frustrate you. If you'd rather write the playbook than inherit one, keep reading. What you'd actually own The whole business. Culture, people, food and beverage, the building, and the numbers. Roughly 70% of your time is on the floor in service, 30% administrative. This is not a desk job. You report directly to the CEO. The Kitchen Lead and Service Lead report to you. There is no assistant manager in this structure. That means real authority, and it means the leads you develop are your bench. Building them into people who could run this place without you isn't a side project. It's the job. We organize everything around four areas: • People. Culture, one on ones, quarterly reviews, written development plans for your leads, onboarding, hiring, and conflict resolution in real time., • Place. The facility and every asset in it, preventive maintenance, vendor relationships, opening and closing standards., • Product. Recipes and SOPs, daily quality checks, inventory and supplier pricing, the bar program, and our health rating., • Profit. Food cost at 23 to 26%, labor at 18 to 20%, weekly payroll, tip distribution, and code compliance. A real path to ownership This is the part most GM postings don't have. At 18 months, you become eligible for stock option grants tied to performance targets we set together. Each grant vests in halves, one year from the grant date and two years from the grant date. We'll say the intent plainly. The person running this business should own a piece of it. Grant sizes and terms are set in writing under our equity plan and shareholders' agreement. What we need from you • 3+ years in restaurant management, including at least a year as a GM or AGM carrying P&L responsibility, • Specific numbers you can speak to on food cost and labor cost. Not "I watched them." What they were when you got there and what they were when you left., • Real experience hiring, training, and developing hourly staff and shift leads, • ServSafe Manager certification, or the ability to earn it within 60 days, • Nights, weekends, and holidays. This is hospitality. Bar or beverage experience is a plus, not a requirement. What we're really looking for Someone who would rather develop a person than replace one. We'll teach you the systems. Toast, Sling, and Gusto are what we run on and we'll get you fluent. What we can't teach is whether you light up when somebody on your team gets better at something. If the best part of your week is watching a person you coached handle something they couldn't handle a month ago, we should talk. We run on radical candor. Care personally, challenge directly. Feedback here is specific, frequent, and goes both directions. Mistakes are how people learn. The only real failure is the one nobody owns. Our mission is to make life a little better. What you get $75,000 base plus two $4,000 performance bonuses a year tied to goals you help set, so $83,000 if you hit them. 120 hours PTO. 40 hours sick leave. 401(k) with 100% match on the first 2%.
