We are evolving into a refined yet approachable Japanese dining destination, committed to sharing the depth, seasonality, and craftsmanship of Japanese cuisine with a wider audience. We are seeking passionate chefs — from ambitious professionals to experienced senior chefs — who want to help shape something special in London’s Japanese dining scene. Key Responsibilities • Assist with daily preparation, ingredient handling, and storage, • Prepare Japanese dishes including sushi, sashimi, grilled, simmered, and seasonal items, • Maintain high standards of presentation and consistency, • Follow strict food safety and hygiene standards, • Keep your station clean and organised, • Support menu development and seasonal updates (senior roles), • Communicate effectively within the kitchen team Requirements • Eligibility to work in the UK, • Minimum 3 years’ professional kitchen experience, • Experience in Japanese or Asian cuisine preferred, • Ability to work in a fast-paced team environment, • High attention to detail and strong work ethic Preferred • Experience in fine dining, • Knowledge of kaiseki, washoku, or modern Japanese cuisine, • Experience with robata, tempura, yakitori, or grill section, • Food hygiene certification Position Details • Salary: Competitive (discussed at interview), • Employment: Full-time, • Start: Immediate, • Working Hours: Up to 48 hours per week
