Jul’s London Employment Type: Full-time Reports to: Head Chef & Sous Chef Role Overview Jul’s London is seeking a skilled and passionate Pastry Chef de Partie to join our pastry team in a high-end Mediterranean fine dining environment. In this role, you will execute refined plated desserts and pastry components inspired by Mediterranean flavours and seasonal ingredients, maintain an immaculate workstation, and support the Head Pastry Chef in delivering an exceptional guest experience. Key Responsibilities • Produce daily pastry and plated desserts to exacting fine dining standards of quality, consistency, and presentation, • Follow recipes with precision while contributing to specials and menu changes without compromising consistency, • Execute advanced pastry techniques, including chocolate tempering, ganaches, pralines, and confectionery, • Maintain mise en place, accurate inventory, FIFO stock rotation, and effective waste control, • Support the training and supervision of junior pastry cooks and interns, • Uphold the highest standards of cleanliness, hygiene, food safety, and allergen compliance (HACCP), • Collaborate with the Head Chef and Executive Chef on dessert development, plating, and seasonal menus Qualifications & Experience • 2–4 years’ professional pastry experience in upscale or fine dining kitchens, • Mediterranean pastry or ingredient-driven experience preferred, • Formal pastry qualification or equivalent professional training, • Strong technical foundation in laminated doughs, choux, custards, meringues, chocolate work, sugar techniques, and glazing, • Proven fine dining plating skills with exceptional attention to detail, • Ability to perform calmly and efficiently in a fast-paced, high-standards service environment, • Solid understanding of food safety, HACCP, and allergen management, • Strong communication, teamwork, and time-management skills Desired Attributes • Genuine passion for Mediterranean flavours and seasonal, ingredient-led desserts, • Creative eye for balance, texture, colour, and presentation, • Calm, organised, and solutions-focused approach under pressure, • Commitment to consistency, excellence, and continuous professional development Working Conditions & Schedule • Full-time position, • Split shifts, evenings, and weekends required, • Fast-paced, high-performance kitchen environment Compensation & Benefits • Competitive salary, commensurate with experience, • Staff meals and uniform allowance, • Professional development, mentoring, and growth opportunities, • Opportunities for menu contribution and career progression within the group Jul’s London is an equal opportunity employer.
